Tools needed
How to make Injeolmi bingsu (rice cake bingsu)
-
Freeze the milk
Pour 300ml of fresh milk into ice trays, then freeze it in the refrigerator for about 4 hours.
-
Mix the glutinous rice flour
Put 100gr of glutinous rice flour into a stainless steel bowl, then add 100ml of filtered water, and use your hands to mix well so that the flour combines with the water and avoids clumping. If the dough is too wet, add more flour; if the dough is too dry, add a little more water.
Continue kneading until the dough becomes a smooth, non-sticky mass, then divide the dough into small bite-sized pieces.
-
Boiled injeolmi rice cakes
Put a pot on the stove and bring water to a boil. When the water is bubbling, drop in the freshly shaped glutinous rice balls to cook.
Prepare a bowl of cold water. When the rice balls have completely floated to the surface, take them out and soak them in the bowl so that they become chewy and delicious.
After about 5 minutes, take them out to drain, then roll the rice balls in 100g of soybean flour, making sure to roll evenly so that the soybean flour coats the surface well.

Making injeolmi bingsu
Take 2 frozen milk ice cubes out of the refrigerator, place them in the ice shaver, and start grinding them into fine ice.
Put the shaved ice into a bowl, scoop 100g of remaining soybean flour evenly over the surface. Next, arrange the injeolmi rice cakes on top, drizzle 2 tablespoons of condensed milk evenly across the bingsu bowl, and finally sprinkle some sliced almonds on top to finish.
How to make shaved ice without a machine:
- Method 1: Put the milk in a zip bag, freeze it, then take it out and crush it finely or use your hands to squeeze until it becomes crushed ice.
- Method 2: You can use a blender to grind the ice instead of using an ice shaver.
Ingredients for Patbingsu (red bean bingsu) For 2 people
Fresh milk 500 ml Red beans 500 gr Injeolmi rice cake 100 gr Sugar 2 tablespoons Salt 1 teaspoon
How to choose good red beans
- Choose plump, round beans; if you press the red bean with your fingernail and it feels hard and does not crumble, it is a fresh red bean.
- It is advisable to choose beans of moderate size so that after cooking, they achieve the right softness and delicious nutty flavor.
- Avoid selecting overly large beans, as these are often not tasty, contain fewer nutrients than smaller beans, and can particularly have a slight astringent taste when eaten.
How to make Patbingsu (red bean bingsu)
-
Freeze the milk
Put 500ml of fresh milk into a zip bag, then freeze for about 3 hours in the refrigerator.
-
Soak and cook red beans
Wash 500g of red beans with water, then place a pot on the stove to cook the red beans, making sure to keep the heat high until the pot of beans boils completely.
Discard the first boiling water, then rinse the beans with cold water until they cool down completely.
Boil water again and add the beans to cook for the second time until they become tender. Remember to lower the heat and stir the beans every 5 minutes so they don’t burn and cook evenly.
Cook for about 30 – 40 minutes until 2/3 of the beans in the pot are soft, then proceed to the step of frying the red beans.
-
Fry the red beans
Add 2 tablespoons of sugar and 1 teaspoon of salt to the pot of red beans, then stir well to fully dissolve the spices. If the pot has very little water left, you can add about 100ml of water.
Keep the heat low for about 10 minutes until the mixture bubbles, then remove the pot and let it cool.
Tip: To cool the mixture quickly, you can place the pot in a basin of cold water. What is Patbingsu and Injeolmi Bingsu?
