Soft tofu 300 gr Soy milk 300 ml Whipping cream 100 gr Gelatin powder 20 gr Matcha powder 8 gr Powdered sugar 50 gr

  • Matcha powder is a fine powder made from 100% young buds of the green tea plant and is produced through a special process. Matcha powder has high nutritional value and is much more expensive than green tea powder.
  • Matcha powder is finer, softer, and lighter compared to green tea powder, which is slightly coarser and appears heavier.
  • Matcha powder dissolves evenly on the tongue, initially having a bitter taste but followed by a sweet, fragrant, and refreshing flavor. Green tea powder dissolves but remains gritty, with a bitter taste and no sweet aftertaste when consumed.
  • Matcha powder has a fresh, mild aroma, even slightly fishy like seaweed. Green tea powder is not as fragrant as matcha and has 7 times less nutritional content compared to matcha powder.

How to choose soy milk for pudding

  • To make a delicious tofu pudding, you should choose unsweetened soy milk that has a high percentage of soybeans in the ingredients and few additives.

  • Sieve the tofu

    You use a sieve, add all 300g of soft tofu into the sieve. Then, use a flat whisk to gently mash the tofu until it is finely sieved and softer.

  • Soak the gelatin

    Next, pour 30ml of water into a bowl, add 20g of gelatin powder and stir well.

    In addition, prepare a bowl filled with cold water (or ice water). Then, place the gelatin bowl into the larger bowl and let the gelatin swell.

  • Make the tofu milk cream mixture

    Place a pot on the stove, add 300ml of soy milk, 100gr of whipping cream, and 50gr of powdered sugar, then bring to a boil over medium heat. When the mixture starts to simmer, reduce the heat and add the soaked gelatin powder.

    Stir until the gelatin is completely dissolved and turn off the heat. Then, slowly pour the mixture into the mashed tofu bowl and continue to stir well.

    Strain this tofu milk cream mixture through a sieve twice to ensure a soft, smooth texture without lumps.

    Next, divide the strained mixture into two bowls to make two flavors of tofu pudding.

  • Making matcha milk cream mixture

    After the tofu milk cream mixture is divided into 2 bowls, add 8g of matcha powder into 1 bowl and stir well to dissolve.

    Next, you sift the matcha milk cream mixture twice to ensure there are no lumps.

  • Pouring into molds and finishing

    You prepare 2 cups or small molds to pour the tofu pudding into!

    Gradually pour the tofu milk cream mixture from the first bowl into the mold first and wait about 5 minutes until the first layer has slightly set on the surface, then continue pouring the remaining matcha milk cream into the mold and it’s done.

    After that, place it in the refrigerator for at least 2-3 hours before enjoying.

  • Natural cocoa powder is light brown, has acidic properties, and a very strong chocolate aroma. Chocolate powder comes in three types: dark, white, and brown, with colors similar to their names.
