Make the chocolate sauce
First, place a pan on the stove over low heat, add 60ml of unsweetened fresh milk, 60ml of whipping cream, and 150gr of dark chocolate, then use a flat whisk to stir for about 5 minutes.
Mix 3 tablespoons of cocoa powder with 30ml of unsweetened fresh milk in a small bowl, stirring well to avoid clumping.
When the dark chocolate has completely melted, add the cocoa powder mixture to the pan and stir well.
Next, add 3 tablespoons of sugar to the chocolate sauce and use a whisk to gently beat the mixture until the sugar dissolves and the sauce is smooth without lumps, then turn off the heat and let it cool to room temperature.

Roasting Almonds
First, spread the almonds evenly on a baking sheet or cutting board, then use a knife to chop them into thin slices or crumbs as desired. At the same time, preheat the oven to 350 degrees Celsius for 5 minutes.
Place another sheet of parchment paper on the baking tray, pour the almond crumbs onto the tray, and spread them out into a thin layer for even roasting.
Then, place the baking tray in the oven and roast at 350 degrees Celsius for 3 minutes to finish the almond part.
Note: You should remove the almonds from the baking tray as quickly as possible while the parchment paper is still hot, then cool them at room temperature. -
Whipping Fresh Cream
Pour 240ml of heavy whipping cream into the bowl of the mixer and start whipping the fresh cream.
First, turn the machine on from low speed and gradually increase to the highest setting over about 2 – 3 minutes. Maintain the highest setting for 1 minute, then pause the machine and use a spatula to check if your whipped cream has started to thicken.
Continue to turn on the machine and whip the fresh cream at medium speed for about 3 – 5 minutes; when the cream is thick and you lift the machine, the cream should not drip down. This means you have succeeded.
Note: You should start whipping from low speed and then increase to high speed, and do not whip the heavy whipping cream for too long as it may cause separation or not whip properly. -
