All-purpose flour 30 gr Almond flour 15 gr Unsalted butter 60 gr Pumpkin seeds 100 gr Wild beans 100 gr Almonds 130 gr Orange jam 50 gr Lemon zest 1 teaspoon Egg whites 2 pieces Powdered sugar 90 gr Vanilla extract 1 teaspoon

Note: For the seed ingredients, you can choose from nuts like walnuts, cashews, chestnuts,… according to your preference!

How to make Nutritional Seed Cake

  • Beat eggs and sugar

    Add 2 egg whites and 90g of powdered sugar into a mixing bowl. Use a whisk to dissolve the sugar, beating until the mixture is well combined and has tiny bubbles like soap, then stop.

    Next, add 1 teaspoon of vanilla extract and 1 teaspoon of lemon zest, and mix the mixture well.

  • Mix seeds

    Add 100g of pumpkin seeds, 100g of almonds, and 100g of wild beans into a bowl, mixing the seeds together.

    After mixing the butter and egg mixture well, add 55g of melted butter, 30g of all-purpose flour, and 15g of almond flour into the mixing bowl, mixing until the mixture is homogeneous and smooth.

    Next, add the mixture of seeds and mix until the seeds are coated with the cake batter. Then add about 50g of orange jam and mix well.

  • Shaping and Baking the Cake

    First, preheat the oven to 160 degrees Celsius for 10 minutes to stabilize the oven temperature before baking.

    Spread a thin layer of butter on the baking tray and line it with parchment paper. Then, pour the cake mixture onto the tray and spread it evenly, or place small portions on the parchment paper, flattening them into round or square shapes according to your preference.

    Place some sliced almonds on the surface of the cake.

    Put the cake in the oven at 155 degrees Celsius for 7 minutes with top and bottom heat to ensure the cake is evenly golden. Next, reduce the oven temperature to 100 degrees Celsius for 20 minutes. Check if the cake is golden and crispy, then turn off the oven, take the cake out, and let it cool.

  • Eggshell: Fresh eggs will have a thin white powdery layer on the outside, and when touched, it feels rough or heavy. If the eggshell is smooth, shiny, or has cracks, it means the eggs have been stored for a long time and are not fresh.
  • Candling: You can candle chicken eggs with a flashlight or by rolling up a piece of newspaper and shining it under sunlight. If you see the air cell of the egg is still small, the yolk round and unmoving, and the white is clear with a light orange or pink color, that indicates a fresh egg.     Next, place the roasted nuts into a bowl along with 70g sliced almonds, 40g almond flour, 30g raisins, 30g cranberries, 10g chia seeds, 20g sugar, and 2 egg whites. Mix well until all ingredients are combined.

    Prepare a baking tray lined with parchment paper, place a round mold on top, then add a little nut mixture and use a spoon to press it down tightly. Repeat until all the remaining nut mixture is used up.

    Preheat the oven to 150 degrees Celsius for 15 minutes. Next, place the cake in the oven for the first round at 150 degrees Celsius for 30 minutes.

    After 30 minutes, flip the cake and bake for a second round for an additional 20 minutes. After 20 minutes, lower the oven temperature to 100 degrees Celsius and dry the cake for 40 minutes to make it crispy.
