How to make Green Tea – Chocolate Nougat

Prepare the ingredients
For the nuts, you put them in the pan and roast over low heat for 7 – 10 minutes, then pour them onto a plate to cool completely.
Tip: If you use a oven, spread the nuts evenly on a baking tray lined with parchment paper, bake for 7 – 10 minutes at 170 degrees Celsius, take the nuts out and let them cool completely.For dried fruits such as raisins, dried blueberries, and dried apricots, soak them in a bowl of warm water (about 60 degrees Celsius) for 10 minutes to soften, then drain in a colander, spread the fruits on a tray, and pat them dry with paper towels to remove excess water.

Make green tea nougat
Place a pan on the stove, add 40g of vegetable butter, and gently stir to melt the butter completely over low heat. Next, add 120g of marshmallow candy, stirring continuously until the candy is completely melted.
Once the marshmallow candy has melted, add 80g of full-fat milk powder and 5g of green tea powder, stirring well to combine the ingredients.
Tip:
- You must keep the heat at the lowest setting and stir continuously to prevent the marshmallow candy from burning and separating from the butter. It’s advisable to use a flat silicone spatula to avoid burning your hands.
- You should not reduce the amount of milk powder because if there is too little, the candy will separate from the butter during storage.
- If you like the chocolate flavor, you can simply replace the green tea powder with cocoa powder.

Completion
Quickly pour the nougat mixture onto a sheet of parchment paper, place the remaining parchment paper on top and use a rolling pin to roll it to your desired thickness. Gently peel off the top sheet of parchment paper, and use a knife to trim the edges of the candy if it doesn’t look good.
Finally, sprinkle the dried rose buds evenly on the surface of the candy and press lightly to make the petals stick to the candy.
Let the candy cool completely for 5 – 6 hours at room temperature or 3 – 4 hours in the refrigerator.
