Tools needed
How to make passion fruit yogurt (passion fruit) jar
-
Cook the milk and cheese mixture
Place a pot on the stove, add 300ml of water, 350gr of condensed milk, and 6 pieces of cheese. Stir the milk mixture over low heat until the cheese is completely melted, then turn off the heat.
-
Add fresh milk and strain the mixture
Next, add 1 liter of unsweetened fresh milk to the cheese mixture and stir well. Then, strain the mixture through a sieve for a smooth texture.
-
Mix yogurt and pour into jars
Next, add 2 jars of yogurt to the fresh milk mixture and stir well until the mixture is combined.
Then, pour the mixed yogurt into jars and seal tightly.
Tip:
- The yogurt starter should be left at room temperature for 3 – 4 hours if taken out from the refrigerator before adding to the milk mixture.
- If cold yogurt starter is added to the milk mixture, it can easily make the final product slimy.
-
Yogurt fermentation
Place the yogurt jars in a foam box, cover the lid, and then cover the box with a large towel. Ferment the yogurt for 6 – 8 hours.
Tip:- The fermentation temperature for yogurt should range from 32 – 48 degrees Celsius, and must not exceed 54 degrees Celsius; otherwise, the yogurt culture will die.
- If you don’t have a foam box, you can put the yogurt in a rice cooker. Just arrange the yogurt in the pot, close the lid tightly, and there’s no need to plug it in!
-
Cook passion fruit sauce
Place a pot on the stove, add 60ml of passion fruit syrup, 50ml of water, 1 teaspoon of vanilla extract, and 1 tablespoon of sugar. Stir the mixture over low heat until the sugar completely dissolves and the mixture thickens, then turn off the heat.
-
Add passion fruit sauce to the jar
Finally, pour about 3 – 4 teaspoons of the cooled passion fruit sauce over the surface of the yogurt jar after fermentation.
Finally, place the yogurt in the refrigerator for about 1 hour before serving. You can also put it in the freezer if you prefer!
-
Final Product
Passion fruit yogurt has 2 layers of yellow and white. When you eat it, you will immediately feel the characteristic sour taste from the passion fruit sauce combined with the smooth, creamy yogurt layer, sweet and sour, incredibly delicious and nutritious!

How to choose fresh passion fruit
- Choose passion fruits with a uniform dark purple skin, slightly wrinkled, large size, and a dry stem.
- Ripe passion fruits usually have a light, characteristic fragrance; the stronger the smell, the better the fruit. Conversely, if the fruit has a foul or sour smell, it should not be chosen.
- If the fruit feels heavy, has smooth skin, and is still green, it indicates that the passion fruit is still immature, with thick skin and little pulp.
- You can check the density of the passion fruit pulp by holding it and shaking it gently. Juicy passion fruits will feel slightly heavy when shaken and appear dense inside.
- Do not choose fruits that are too small, still green, hard, with fresh stems, or very light in weight. They may be immature, with very little pulp or not yet ripe.
How to make packaged passion fruit yogurt
-
Mix the ingredients
Add 400g of condensed milk, 2 cups of yogurt, and 1.1 liters of sweetened fresh milk into a pot and stir well to combine the mixture.
-
Strain passion fruit to extract juice
Cut the passion fruit in half, then scoop out the flesh and put it into a strainer.
Next, use a spoon to press and stir continuously to extract the juice from the passion fruit.
Tip: To filter all the passion fruit juice, you can add a little water into the strainer, then use the spoon to press the passion fruit seeds firmly. -
Add boiling water to the yogurt mixture
Boil 1 liter of water, then gradually pour it into the pot of yogurt, stirring evenly to combine. Next, cover the pot tightly, wrap it with a towel, and let it sit for 8 hours.
Note: It is advisable to add boiling water slowly; pouring a large amount at once may cause the high temperature to kill the yogurt cultures. -
Cook passion fruit sauce
Place a pot on the stove, add 250g of sugar, passion fruit juice, stir well over medium heat until the sugar dissolves, then turn off the heat and let it cool.
-
Mix passion fruit sauce into the yogurt
Add the passion fruit sauce to the yogurt that has been fermented for 8 hours, pouring in while stirring to blend the mixture.
-
Pour yogurt into bags
Pour the yogurt into small bags and then use a rubber band to tie them tightly.
-
Completion
Finally, place the yogurt bag in the freezer refrigerator until it freezes, and it will be ready to use.
-
Final Product
The passion fruit yogurt is smooth and has no ice crystals. Besides the sour, creamy sweetness from the yogurt, you will also taste the distinctive sourness and light fragrance from the passion fruit sauce.
How to Store Yogurt for a Long Time
- You should store yogurt jars in the refrigerator’s cool compartment or freezer for 5 – 7 days; for yogurt bags, place them in the freezer! Yogurt will continue to ferment, so the longer it is stored, the sourer it will become.
- Additionally, to store yogurt for a longer time, you should sterilize the container with boiling water, dry it, and then use it.
