How to Make Bubble Milk Tea

Making Tapioca Pearls
You put into a bowl 100g of tapioca flour and 10g of cocoa powder and mix well.
Next, you put a pot on the stove, add 80ml of water and 5 tablespoons of sugar, stir to dissolve the sugar, and bring to a boil over medium heat. Then add the mixed flour mixture and turn off the heat, using a spoon to stir until the dough sticks together and is firm, then knead the dough continuously with your hands until it no longer sticks when pressed.
Next, you sprinkle a little tapioca flour on the cutting board (or table) and place the dough on it, apply a little tapioca flour to your hands to prevent sticking, and skillfully take a piece of dough and roll it into small round balls!
Tip: To keep the tapioca pearls separate and not sticky, after rolling the balls, you should coat them with a little more dry tapioca flour!
You continue to boil about 1 liter of water, then add the tapioca pearls to the pot and cook over medium heat for about 10 – 15 minutes until the pearls are cooked, soft, and float to the surface, then you can turn off the heat. To ensure the pearls are cooked, you can taste them; they should feel soft, a little chewy, and not hard on the inside.
Finally, you take the tapioca pearls out, soak them in cold water for about 2 – 3 minutes, then drain them!

Make milk tea
You put 1 bag of Lipton tea into glass and add 80ml of boiling water to steep for about 3 – 5 minutes. Then, remove the tea bag, add 5 tablespoons of condensed milk into the tea glass and stir with a spoon until the milk is dissolved.
Tip: Depending on your taste, adjust the amount of milk accordingly!

Mixing the tapioca flour
You add 100gr of glutinous rice flour, 100gr of tapioca starch, 8gr of cocoa powder, 3/2 tablespoons of sugar, and 1/3 teaspoon of salt into a bowl and mix well.
Then, gradually add 100ml of just boiled water and use a spoon to stir the flour mixture until it feels firm and when you press your finger down on the mixture, it doesn’t stick.
Note:
- To prevent the dough from becoming too watery, when adding boiling water, you should add it little by little!
- If the dough is too watery, you can add some dry tapioca starch!

Shaping the tapioca pearls
You use a little tapioca starch to dust your hands and sprinkle on the cutting board.
Next, divide the mixed tapioca dough into 3 – 4 parts and gently roll them out to make them longer. After that, use a knife to cut the dough into pieces about 1/3 of your finger’s thickness!
Then, you shape them into small round balls that are bite-sized.
Once shaped, put the tapioca pearls into a bowl and sprinkle a little remaining tapioca starch over them and toss gently so that the starch sticks to the pearls to prevent them from sticking together.

Boil the tapioca pearls
Put about 1 liter of water in a pot and bring it to a rolling boil. Drop the shaped tapioca pearls in and stir a few times with chopsticks to prevent them from sticking together while boiling.
Cover the pot and boil the tapioca pearls for about 5 minutes until the water starts boiling again, then open the lid and continue boiling for another 30 minutes on high heat!
Next, turn off the heat, cover the pot, and let the tapioca pearls rest for 30 minutes, then scoop them out and rinse with cold water to reduce stickiness.
Finally, when the tapioca pearls are drained of water, place them in a bowl, add about 3 tablespoons of sugar, mix well, and store in the refrigerator refrigerator.
To prevent the tapioca pearls from swelling too much and to preserve them for longer: You should soak the tapioca pearls in sugar and store them in the refrigerator. When you’re ready to eat, you can boil them again or put them in the microwave for about 2 – 3 minutes at medium heat!
