  • Fresh shrimp have a translucent shell, while if you observe that the shrimp’s shell is dark or uneven in color, that is a sign that the shrimp has died and will not taste good.
  • In particular, fresh shrimp should feel firm and strong when held, able to jump away, and the shell joints should be flexible, with the head and body of the shrimp tightly attached to each other, not separated.
  • Additionally, choose shrimp with curled tails as that indicates freshness; if the tail is spread out, it is mostly shrimp that have been injected with chemicals or water.
  • Moreover, it is advisable to avoid buying shrimp that feel slimy, too soft, have a rounded curved shape, and where the legs no longer cling tightly to the body, as these indicate shrimp that have been stored for too long.

  • Delicious waxy potatoes have a yellow color, are not rotten or leaking, slimy, while potatoes that lack nutrients and sweetness will generally be white.
  • Additionally, choose potatoes with a smooth skin, without any unusual tiny spots on the surface, and when held, they should feel solid, not too light.

  • Additionally, if you observe a thin powdery layer on the outside of the egg, it indicates that the egg is fresh, and the eggs are also uniform in size, with no significant differences.
  • Moreover, if you pick it up and it feels too light, and you can hear a liquid sloshing sound when shaken, then it is a rotten egg and should definitely not be purchased.

How to prepare Fried Shrimp

  • Prepare and marinate the shrimp

    First, with 6 shrimp that you have bought, wash them directly under running water to clean them, then drain. Next, use your hands to peel the shell from the body of the shrimp, while also removing the black string.

    Then, place the shrimp on a plate and marinate with 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of ground pepper, mix well, and let the shrimp absorb the seasoning for about 15 minutes.

    • Count backward from the tail of the shrimp to the second groove between the two shell segments, insert a toothpick through this spot and gently pull the black string out.
    • You don’t need to use a knife to cut the back of the shrimp; you can also use a toothpick to poke out the head part of the shrimp’s body to find the black string. Gently pull this black string out, and the shrimp will be clean.

  • Prepare potatoes

    For the potatoes, you use a peeler to peel the skin, and soak them in a bowl of diluted saltwater. Next, rinse with clean water, drain, and then use the peeler to shred them into thin strips.

    After that, take a bowl and add the prepared potatoes, 1/2 tablespoon of all-purpose flour, and 1/2 tablespoon of batter mix, using chopsticks to mix well so that the potatoes are evenly coated with flour.

    • Method 1: If you are not using them immediately, you can soak the potatoes in water covering the surface of the potatoes, and add a little vinegar.
    • Method 2: More commonly, you can soak the potatoes in water while preparing them, however, if you soak them too long, it will diminish the flavor of the potatoes.

  • Wrapping shrimp

    After preparing the ingredients, take another bowl and add the yolk of 1 chicken egg, 1/2 tablespoon of all-purpose flour, and 1/2 tablespoon of batter mix, then use chopsticks to stir until the mixture is well combined.

    Then, dip the marinated shrimp into the beaten egg bowl, while spreading an adequate amount of potatoes evenly on your hand, then place the shrimp and a little potato on top, using your hands to gently squeeze and press so that the potatoes stick evenly onto the shrimp meat.

    Continue doing this until you finish all the shrimp!

    Next, place a pan on the stove with 300ml of cooking oil over high heat. When the oil is hot, reduce to medium heat and add the shrimp you just coated to fry for 5 – 7 minutes.

    When the shrimp and potatoes are golden on both sides, turn off the heat, remove the shrimp to a plate to drain the oil, and enjoy right away!

    Tip: To avoid unevenly crispy potatoes, do not use too little oil.
