How to choose fresh American corn (sweet corn)
- You should choose American corn ears with green husks, fresh silk, and when held, they feel heavy.
- The husk of fresh American corn will tightly hug the corn cob, the kernels are bright yellow, plump, and uniform.
- Be sure to choose corn ears of moderate size, not too large or too small, as the kernels can be easily crushed because they are usually fresh and just harvested.
- Avoid buying corn ears with wilted husks, feeling light in hand, or showing signs of rot, with shriveled kernels.

How to Make Corn Milk Jelly
-
Prepare the Corn
Buy sweet corn, peel the husk, and remove the silk, then use a knife to separate the kernels from the cob and put them in a bowl, wash them well and let them drain.
Add the separated corn kernels into a blender along with 200ml of sweetened fresh milk and blend until smooth. Strain the mixture through a strainer to obtain the corn milk.
-
Cook the Corn Milk Jelly
Put 500ml of filtered water, 250gr of sugar, 10gr of jelly powder along with the corn milk into a pot and stir well to dissolve the mixture completely.
After dissolving, place the pot on the stove and cook over medium heat, making sure to stir constantly to prevent the mixture from thickening, cook for about 10 minutes.
To make the finished jelly look nice and not have bubbles, when the mixture boils, use a spoon to skim off the bubbles that rise to the surface.
Tip:
- To prevent the jelly from clumping, you should mix the jelly powder and sugar before dissolving it in water.
- To avoid the mixture burning at the bottom of the pot while cooking, stir constantly and cook on low or medium heat.
-
Pour the jelly into molds
After turning off the heat, use a spoon to pour the jelly into the molds you have prepared, wait for the jelly to cool for about 20 – 30 minutes, then put it in the refrigerator for about 1 – 2 hours before using.
