How to choose fresh ingredients
How to choose fresh goat meat
- To buy fresh goat meat, you should purchase young goat meat, with a processing time of about 12 hours from slaughter to cooking.
- Fresh goat meat has a pink-red color, firm texture, and does not leak water. Young goats usually have less pungent smell, and the older the goat, the stronger the smell.
- In addition, young goats have pink-red meat, small and fine fibers, while older goats have darker meat and larger fibers.
- You need to find a reputable store that supplies goat meat, with clear origins, full inspection stamps, veterinary certificates, food safety certificates, and establishments or stores that meet the requirements for selling fresh meat.
How to choose fresh, soft, and clean rice noodles
- The best rice noodles are those freshly made every morning, with a slightly murky, ivory-white color, and the noodles should not be glossy or smooth, but have a certain chewiness.
- Fresh, clean rice noodles will usually be soft and somewhat fragile, with the noodles often sticking together.
- Avoid buying fresh rice noodles that are transparent, shiny, and have a soft chewiness when touched. Because fresh noodles exhibiting these characteristics may have been soaked in chemicals, which is not safe to consume.
- To ensure safety, you can buy fresh rice noodles from TasteVN and supermarkets or try making fresh rice noodles at home with detailed guidance from TasteVN.
How to prepare Goat Meat Dipped in Vinegar with Perilla
-
Prepare and Marinate Goat Meat
Wash the goat meat with 100ml of white wine to eliminate the odor, then rinse it with clean water. Slice the goat meat thinly, and marinate it for 10 minutes with 2 teaspoons of roasted sesame, 1/2 onion cut into rings, and 1 teaspoon of seasoning.
-
Prepare Other Ingredients
For perilla leaves and herbs, remove any old or wilted leaves, then wash them thoroughly and let them dry. For the perilla leaves, remember to discard any that are infested, and then rinse them with water again!
-
Cook the vinegar broth
Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil and sauté 2 teaspoons of minced garlic until the garlic is golden and crispy. Once the garlic is fragrant and golden brown, add 1.5 liters of coconut water to the pot and bring it to a boil over high heat for about 10 minutes until the water starts boiling.
When the water is boiling, season the coconut water with about 50g of rock sugar and 2 teaspoons of salt. Then, slowly add 200ml of vinegar to the pot of broth for dipping the goat meat, adjusting so that the sourness of the vinegar is just gently harmonized with the salty and sweet flavors of the coconut water.
After about 5 minutes when the water starts boiling again, add a few slices of pineapple and onion to the pot of vinegar.
-
Make the dipping sauce
Place a pot on the stove, heat 1 small cup of dipping sauce over low heat for about 5 minutes until it simmers, chop a slice of pineapple finely and add it to the pot with the sauce for about 2 minutes until you see the mixture thickens.
Then, transfer the dipping sauce mixture to a blender, blend until smooth, adding minced garlic and chili according to your preference.
-
Completion
Boil a pot of vinegar water, dip the goat meat into the vinegar water and take it out as soon as it is just cooked, you can also dip it with perilla leaves.
Goat meat is best enjoyed with various herbs and dipped in a little shrimp paste. You can eat it wrapped in rice paper or served with vermicelli, both are delicious!
