    Wash the goat meat with 100ml of white wine to eliminate the odor, then rinse it with clean water. Slice the goat meat thinly, and marinate it for 10 minutes with 2 teaspoons of roasted sesame, 1/2 onion cut into rings, and 1 teaspoon of seasoning.

    For perilla leaves and herbs, remove any old or wilted leaves, then wash them thoroughly and let them dry. For the perilla leaves, remember to discard any that are infested, and then rinse them with water again!

  • Cook the vinegar broth

    Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil and sauté 2 teaspoons of minced garlic until the garlic is golden and crispy. Once the garlic is fragrant and golden brown, add 1.5 liters of coconut water to the pot and bring it to a boil over high heat for about 10 minutes until the water starts boiling.

    When the water is boiling, season the coconut water with about 50g of rock sugar and 2 teaspoons of salt. Then, slowly add 200ml of vinegar to the pot of broth for dipping the goat meat, adjusting so that the sourness of the vinegar is just gently harmonized with the salty and sweet flavors of the coconut water.

    After about 5 minutes when the water starts boiling again, add a few slices of pineapple and onion to the pot of vinegar.

  • Make the dipping sauce

    Place a pot on the stove, heat 1 small cup of dipping sauce over low heat for about 5 minutes until it simmers, chop a slice of pineapple finely and add it to the pot with the sauce for about 2 minutes until you see the mixture thickens.

    Then, transfer the dipping sauce mixture to a blender, blend until smooth, adding minced garlic and chili according to your preference.

    Boil a pot of vinegar water, dip the goat meat into the vinegar water and take it out as soon as it is just cooked, you can also dip it with perilla leaves.
