- You should choose free-range chicken for a better soup. The skin of free-range chicken is light yellow with darker yellow in some areas like the breast, wings, and back compared to industrial chickens.
- The skin of free-range chicken is thin, smooth, and has high elasticity. Choose chicken that looks fresh, without any foul smell or antibiotic odor, and the skin should not have bruises or blood clots. To buy good chicken, avoid those that are dark as they are chickens that died before being processed.
- Additionally, to avoid buying water-injected chicken, pay attention and press on the suspected water-injected areas (mainly thighs and breasts) to check; if they feel mushy, slippery, or deformed, do not buy. These injected chemicals are not good for health.

- For fresh lotus seeds, choose round, even seeds that are about half the size of a finger joint and have a slightly yellowish-white color.

Prepare the ingredients
Clean the chicken by removing all excess feathers, rinse off any blood with water, then rub salt all over the outside and inside of the chicken. After that, rinse with clean water.
Remove the bitter heart from the fresh lotus seeds, then rinse them clean with water and let them drain.
Peel the carrots and cut them into small cubes.
Soak the shiitake mushrooms until they expand, then cut off the stems, rinse them with salt water, and then cut them in half before blanching them briefly in hot water.
Trim the roots of the green onions and coriander, rinse them clean, and chop them finely.

Boil the chicken
Put a large pot of water on the stove and add 1/2 chicken to boil for 20 – 25 minutes.
Once the chicken is boiled, remove it and let it cool before shredding the meat.

Cook the soup
First, bring the chicken broth to a boil to soften the lotus seeds, carrots, and shiitake mushrooms; boil for about 15 minutes over medium heat.
When the ingredients begin to soften, add the shredded chicken and season the soup with 1 tablespoon of seasoning and 1 teaspoon of monosodium glutamate. Use a spoon to stir well until the seasonings dissolve completely.
Then, mix 2 tablespoons of cornstarch with 2 tablespoons of water and add it to the pot, using chopsticks to stir until the soup thickens.
At this point, beat two eggs and gradually add them to the pot while stirring well.
Finally, sprinkle some chopped green onions and cilantro on top, and it’s done.
