- Do not choose unwrapped mọc that is often sold “openly” in markets. Because insects and dirt can stick to it, it will not ensure health when consumed.

- Fresh and delicious pork ribs usually have a natural light red color, and when you press them with your hand, they will have a certain elasticity; the meat should not be mushy or soft.

Prepare and simmer the ribs
To clean the ribs of blood and eliminate the unpleasant smell, after purchasing the pork ribs, rinse them with salt and then blanch them in boiling water several times.
Then place them in an pot and put it on the stove, adding 4 liters of filtered water, 4 sliced shallots, 1 tablespoon of sugar, 2 tablespoons of seasoning powder, and 2 tablespoons of seasoning granules.
Add the ribs and cook over medium heat; when the water boils, skim off the foam to make the broth clearer. Finally, cover the pot, reduce the heat and simmer the ribs for 50 – 60 minutes.

Prepare other ingredients
Peel the white radish, wash it clean, then cut it into bite-sized pieces. Remove the roots from the green onions, wash them thoroughly, chop the green parts, and cut the white parts into sections.
For the fresh herbs served alongside, pick out the fresh leaves, soak them in diluted salt water for about 10 minutes, rinse with clean water, and let them drain.
Rinse the fried tofu briefly with water, you can cut it into small pieces or leave it whole according to your preference.

Cook the broth
When the ribs have been simmering for about 20 minutes, add the white radish and cook together, seasoning with a mixture of spices including: 1 tablespoon of seasoning powder, 2 tablespoons of sugar, 2 teaspoons of monosodium glutamate, 1 tablespoon of salt seasoning, 1/3 tablespoon of salt.
After simmering the bones for 50 – 60 minutes, add the fried tofu and shape the moc (sausage) into small round balls and put them into the pot. Cook for another 10 – 15 minutes for the moc to be cooked, then season the broth to taste.
Finally, add the chopped green onion that you cut earlier and cook for about 2 more minutes before turning off the heat to finish.
