How to Make Vegetarian Green Curry

  • Prepare the Ingredients

    Place a pan on the stove over medium heat, add 1 teaspoon of coriander seeds, 1 teaspoon of dill seeds, and 1 tablespoon of black pepper, then stir for about 5 minutes before turning off the heat and letting it cool.

    Wash the cilantro, separating the leaves from the roots, then blend the cilantro leaves with 1/2 cup of water in the blender until smooth.

    You put the roasted mixture into the blender, add 5 green chili peppers, 2 stalks of lemongrass, 5 roots of coriander, 1 rhizome of galangal, 5 cloves of garlic, 3 shallots, the peel of 1 lemon, 1 teaspoon of salt, 1 cup of water, and then blend until smooth.

  • Stir-frying vegetables

    You heat a pan over medium heat, add 2 tablespoons of cooking oil to the pan, wait for the oil to heat up, then sauté 1 tablespoon of chopped scallions until fragrant.

    When the scallions are fragrant, add 50g of vegetarian chicken slices, 100g of eggplant, 30g of baby corn, 1/4 of a broccoli, 30g of shiitake mushrooms, stir-fry on medium heat for 10 minutes, then season with 1 tablespoon of seasoning powder and turn off the heat.

    Place a pot on the stove over medium heat, add the green curry sauce to the pot, add 1 liter of coconut milk, and stir gently for 10 minutes.

    After 10 minutes, add the stir-fried vegetables and season with 3 tablespoons of vegetarian seasoning, 2 tablespoons of rock sugar, add the blended coriander water, bring to a boil again, and taste to adjust seasoning before finishing!
