  • You should choose the hind leg because the hind leg usually has more meat, it is crunchy when eaten but not greasy and has higher nutritional value than the foreleg.
  • Use your hand to press to test the elasticity; if the meat feels dry and has good elasticity, then it is fresh pork leg.
  • Observe whether the hoof is intact and pay attention to the color of the hoof, it should be light pink and have the characteristic smell of fresh pork to be a good leg.
  • Avoid choosing legs with dark-colored hooves, slimy meat, and strange foul odors.

How to choose quality figs

  • To choose quality figs when braising pork leg, you should prioritize garden figs, as they have thicker flesh and a fresher color.
  • Choose figs that are moderately young, when held they feel light, and pressing with your fingernail feels firm, with a pinkish interior.
  • Avoid choosing figs that are too young or too ripe, with rough skin or damaged. Also, do not select figs that feel soft when pressed because they might be overripe and will not taste good when braised.

How to prepare Braised Pork Leg with Figs

  • Prepare the pork leg

    Wash the pork leg clean, cut it into round slices. Place a pot on the stove, add the pork leg into the pot of water to briefly boil, crush a piece of ginger and add it along with a little salt to reduce the smell of the pork leg. When the water boils, turn off the heat, remove the pork leg, wash it clean, and discard the boiling water.

  • Prepare the fig

    Peel the fig, then soak it in salted water to remove the sap, then cut each fig into 4 equal pieces.

    Place a pot on the stove, add 1.5 tablespoons of cooking oil to the pot, heat it over medium flame, then add 2 sliced shallots to sauté until fragrant. Next, add the chopped figs and stir-fry briefly, season the pot with 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1 teaspoon of fish sauce, and stir well to let the figs absorb the seasoning.

    Then, continue to add the pork leg and stir for about 5 minutes to let it absorb the flavor, then add water to the pot until it covers the pork leg.

    Simmer the pork leg with figs for about 30 minutes until tender, then turn off the heat. Add 1/2 teaspoon of monosodium glutamate, adjust seasoning to taste, then sprinkle with chopped green onions and ladle into a bowl.
