How to choose fresh and delicious shrimp

  • Fresh and delicious shrimp will have a transparent shell, a characteristic seafood smell rather than a rotten smell, and when pressed, the shrimp will feel firm and not mushy.
  • Additionally, check that the head, legs, and tail of the shrimp are tightly attached to the body, and the shrimp has a straight, slightly curved shape is a sign of good shrimp.
  • Do not buy if you see the head, legs, and tail of the shrimp turning black, detached, or the body of the shrimp is bent and mushy, as this indicates old shrimp that are not fresh.

How to make Fresh Shrimp Bok Choy Soup

  • Prepare and Marinate the Shrimp

    Wash the shrimp with water. Then remove the head, peel off the shell, and devein the back, then wash again with water and chop finely.

    After that, marinate the shrimp with 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of salt. Mix well and let it sit for about 20 minutes to allow the shrimp to absorb the seasoning.

How to prepare Shrimp and Bok Choy Soup

  • Prepare the ingredients

    Buy bok choy and use a knife to cut off the tough root, separate into small clusters, then soak in diluted salt water for about 5 – 10 minutes, rinse several times with clean water, drain, and cut into bite-sized pieces.

    Remove the roots and wilted leaves from the green onions and cilantro, then rinse them clean and let them drain. Next, take the green onion tops, smash them, and chop them finely.

    To remove the dirt from the dried shrimp, soak them in warm water or clean water for about 10 – 15 minutes, then take them out and put the dried shrimp in a mortar to pound finely.

  • Cooking Soup

    Place a pot on the stove, add 1/2 tablespoon of cooking oil to the pot and heat over medium heat, wait for the oil to shimmer then add minced green onion to fry until fragrant, then pour in the dried shrimp that has been finely crushed and stir-fry together, mixing well until the shrimp releases its aroma.

    Next, pour about 2 bowls of filtered water into the pot (rice bowl), bring to a boil over high heat and then gradually season with the following condiments: 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1 spoon of fish sauce, 1 teaspoon of salt, 1/2 teaspoon of sugar, stirring well to dissolve all the seasonings.

    When the water boils, skim off the foam and add the bok choy, cook until the water boils again, taste and adjust the seasoning to your liking, cook for about 2 more minutes until the vegetables are just tender, then add chopped cilantro and stir well before turning off the stove.

    Note: Do not overcook the vegetables as this will lose their crispness and green color.
