How to make Red Bean Soup

Prepare the ingredients
To ensure the red beans are soft and not bitter when cooked, wash the red beans and soak them overnight.
Peel and wash the carrots, then cut them into small cubes.
Cut the broccoli into small florets, soak in diluted salt water for about 5 minutes, then rinse with water and drain.
For snow fungus, soak it until it expands and then cut it into small pieces.
Take the soft tofu out of the container and cut it into bite-sized cubes.
Tip: You can also use other types of mushrooms depending on your preference. -
Stir-fry vegetarian fish cake
Add 1 tablespoon of cooking oil to the pan, when the oil is hot, sauté with finely chopped green onion.
Then add the vegetarian fish cake and stir-fry briefly with 1 tablespoon of vegetarian fish sauce and turn off the heat.

Simmer red beans
After soaking the beans, rinse them with clean water.
Next, add the red beans to simmer with 1.5 liters of water on low heat for 45 – 60 minutes until the beans are soft.
Tip: If you cook red beans that you just bought, when the water boils, you should discard that water and add fresh water for the second simmer. -
Cooking Soup
When the boiled beans are soft, add the carrots and wait for it to boil again.
Next, add the chopped broccoli and the sautéed vegetarian fish cake, after 2 minutes add the snow fungus and continue to wait for the soup to boil.
When the soup pot boils again, season with 1 tablespoon of sugar, 2 teaspoons of vegetarian seasoning, and 1 tablespoon of vegetarian fish sauce.
Dilute 2 tablespoons of tapioca starch with 1 tablespoon of water, slowly add the diluted starch while stirring quickly to prevent lumps.
Finally, add the soft tofu, gently stir, then add the finely chopped celery and turn off the heat.
