  • For live fish: You should choose fish that swim vigorously, have clear eyes, pink gills, skin without strange colors, and avoid weak and pale fish.
  • For prepared or frozen fish: You should choose fish with clear, bright eyes, not cloudy and slightly bulging. The fish’s cornea should be elastic, gills should be pink-red, and if it is not slimy, it is still fresh.
  • Avoid choosing fish with open mouths, and if you press the body of the fish and it leaves a finger imprint, it may be spoiled and not usable.

How to choose delicious fresh starfruit

  • You should choose starfruits that are slightly green in color as these types will make the dish more fragrant and appealing.
  • When selecting starfruits, you also need to pay attention to choosing those with a moderate size, firm and juicy; when you gently press the sides, the fruit should feel slightly firm.
  • Avoid choosing fruits that are bruised, rotten, or too soft as these are overripe starfruits that are no longer fresh and will affect the taste of the dish.

  • Prepare the ingredients

    After buying the fish, you will clean the insides, scale it, and remove the gills, fins, and tail. Then, make shallow cuts on the fish and eliminate the fishy smell by rubbing it thoroughly with 1 tablespoon of salt for about 5 minutes.

    Next, place the cleaned fish onto a plate and proceed to marinate with the following seasonings: 3 teaspoons of seasoning powder, 1 tablespoon of monosodium glutamate, 1 teaspoon of pepper, and use your hands to massage evenly to allow the fish to absorb the seasonings, marinating for about 10 – 15 minutes.

    Sour starfruit should be washed and sliced into thin round pieces. Shallots should be peeled, washed, drained, and cut into thin slices.

    Green onions and coriander should be washed and then chopped finely. For chili peppers, you will use a pestle to crush them.

    Place a pot on the stove, add 2 teaspoons of sliced shallots into the pot and sauté for about 5 minutes, then add the starfruit and stir for another 3 minutes.

    After that, add 1 bowl of water into the pot and bring it to a boil, then add green pepper and cover the pot to cook the soup for about 7 – 10 minutes.

    Finally, add the marinated fish into the pot and cook for about 10 minutes over medium heat. While adding the fish, do not cover the pot!

    When the pomfret is cooked, turn off the heat, add the chopped onions and coriander into the pot, and it will be ready to enjoy!
