How to choose fresh ingredients
How to choose fresh shrimp
- First, observe the shell; fresh shrimp will have a translucent shell, while dark or unevenly colored shrimp are likely dead and not fresh.
- When picked up, fresh shrimp feel firm and strong, capable of jumping far, and the shell joints are flexible, with the head and body tightly connected, not separated.
- Additionally, fresh shrimp will have their tails folded together, but if the tail is spread out, the shrimp may have been injected with chemicals or water to make them plumper.
- Avoid choosing shrimp that feel slimy, have a rounded and curved shape, have legs that are no longer firmly attached to the body, or have soft shells when pressed.

How to choose fresh and delicious chicken eggs
- Pay attention to choose chicken eggs that have an outer shell looking beautiful, sturdy, shiny, with no rough shapes or unusual rough spots on the shell.
- In addition, fresh chicken eggs will have a thin layer of powder on the outer shell, and the eggs will also be of uniform size.
- When held, they should feel firm; if shaken, you should not buy them if you hear a sound like liquid flowing inside.
- Avoid buying chicken eggs that have too many crushed shells or are too soft, as this is a sign that the eggs have spoiled due to being left for too long.

Preparation and Marinating Shrimp
First, wash the shrimp thoroughly, use a small knife or scissors to slide into the back of the shrimp, then make a long cut down to the back and peel off the shell, while also removing the shrimp’s intestinal tract from the back.
Next, place the prepared shrimp in a bowl with 1 teaspoon of minced garlic, 1/2 teaspoon of ground pepper, and 1 teaspoon of seasoning powder, mix well and let the shrimp absorb the spices for 15 minutes.
Quick way to remove shrimp’s intestinal tract:- Method 1: First, turn the shrimp upside down, gently bend the head upwards while squeezing lightly to push the dirty part out. Then, just hold that dirty part to pull the intestinal tract out.
- Method 2: Another way is to turn the shrimp over, then peel both sides of the shrimp’s head and hold tightly at the connection between the body and head, gently pull it out and the intestinal tract will come out with it.

You take a bowl, crack 1 egg into it, and use chopsticks to beat the egg until it is mixed. Next, take 2 more bowls for 100g of breadcrumbs and 150g of crispy flour.
Then, you coat the shrimp successively in the crispy flour, the beaten egg, and finally in the crispy flour. Keep doing this until all the marinated shrimp is used up.

Notes when using an air fryer
- To make shrimp taste better, you should preheat the air fryer for 3 – 5 minutes before adjusting to the required cooking temperature.
- Avoid foods that may get caught in the air fryer’s fan; you should not place food that is too small into it.
- For even cooking, only add a sufficient amount of food; adding too much will not only undercook it but also take longer.
- The flavor of the dish will be preserved if you choose the right temperature and time for each type of food.
Finally, TasteVN has provided you with a way to fry shrimp with an air fryer that still delivers a deliciously crispy and fragrant result. Give it a try!
