How to choose fresh strawberries
- To choose fresh strawberries, you should select those that are bright red, plump, evenly colored, and have green stems.
- It is advisable to buy strawberries when you can smell their characteristic sweet aroma.
- Avoid choosing those that are dark red, bruised, blackened, or have withered stems as these are old, spoiled, and lack delicious flavor.
What is heavy cream? Where to buy it?
- Heavy cream is made from milk, containing a higher fat content than whipping cream, typically ranging from about 36% to 40%.
- Heavy cream, when whipped, holds its shape better, so it is often used for decorating cakes.
- Additionally, heavy cream has a sweet flavor, so during the cooking process, you should pay attention to adjust the amount of sugar accordingly!

How to make Ice Cream Balls

Make Strawberry Sauce
First, remove the stems from the strawberries and wash them thoroughly with water 2 – 3 times, then let them drain.
Next, add 150g of strawberries, 100g of sugar, 50ml of water, and 1 tablespoon of lemon juice into a pot. Place the pot on the stove and bring it to a boil over medium heat.
After about 5 – 7 minutes, the mixture will start to boil, at which point you should reduce the heat and continuously stir with a ladle until the mixture thickens and the strawberries become soft and mushy, then turn off the heat.
Pour the strawberry mixture through a sieve and use a ladle to mash the strawberries to obtain a deliciously fragrant strawberry sauce with an attractive color.
Tip: If you like other flavors, you can replace strawberries with other fruits of your choice! -
Coat the mold with white chocolate
Put 100g of white chocolate into a bowl and steam it for about 5 – 10 minutes until the chocolate melts. Next, use a spoon to scoop the white chocolate into each mold and spread it evenly. Remember to leave half of it to cover the top of the ice cream later!
After spreading the chocolate evenly in the mold, you will flip the mold upside down and gently shake it so that the excess chocolate flows down onto the plate below. This way, the finished ice cream balls will be smooth and visually appealing.
Place the mold in the freezer refrigerator for about 10 minutes to allow the white chocolate to set.

Whip the cream mixture
Add 240ml of heavy cream into a mixing bowl or a large bowl, then use a hand mixer to beat on low speed for 3 minutes until soft peaks form, then turn off the machine.
Next, add 150g of condensed milk and 2 teaspoons of vanilla extract into the bowl and continue to whip for another 5 – 7 minutes until the cream mixture is smooth, thick, and holds peaks, then it’s done.

Make ice cream balls
Scoop the cream mixture into a piping bag. Take the chocolate-covered ice cream mold out of the freezer.
At this point, you scoop 1 teaspoon of strawberry sauce into each compartment of the mold. Next, you pipe the cream mixture level with the surface of the mold and use a spoon to smooth the surface of the cream.
Tip: If you don’t have a piping bag, you can use a spoon to scoop the cream mixture into the mold!With the remaining white chocolate, use a spoon to scoop and spread evenly to cover the surface of the ice cream ball. After completing the entire ice cream mold, place it in the freezer for about 2 – 3 hours, and then you can enjoy it.
