How to make black grape ice cream

Prepare the grapes
First, you will put 2 tablespoons of dried grapes into a bowl of water and soak for about 10 minutes.
With fresh black grapes, after purchasing, soak them in salt for about 20 minutes, then wash thoroughly and drain.

Blend the grapes
Next, add 200g of cleaned black grapes into the blender and blend until the mixture still has some bits of grape skin and is not completely smooth.

After blending the grapes, pour the mixture into a pan, add 4 tablespoons of sugar, and stir well.
Cook the grape and sugar mixture for 5 minutes over medium heat until it thickens, then turn off the heat and pour the grape sauce into a bowl to cool.

Next, pour 250ml of whipping cream into a bowl and use a hand mixer to whip the cream until soft peaks form, which indicates it’s ready.

Finally, add half of the soaked raisins to the mixture and use a spatula to mix until the grape cream is completely combined.

You proceed to pour the whipped grape cream mixture into the mold and use a flat spatula to level the surface of the cream in the mold.
Next, you scoop half of the remaining grape sauce on top and use a stick to create a swirl pattern on the surface of the cream.
Finally, you sprinkle the remaining half of the dried grapes on top and close the lid, placing the ice cream mold in the freezer for about 6 – 8 hours until the ice cream is firm and ready to enjoy.
