How to Choose Fresh Delicious Grapes

  • You should choose grapes that are of moderate size, slightly soft, with a smooth, shiny skin, and especially not bruised.

  • In addition, fresh grapes usually have a powdery coating on the skin, with green and firm stems; in contrast, grapes that have been stored for a long time will have brownish-black, withered stems.

  • Do not choose grapes that show signs of being mushy or have blemishes on the skin, rough skin, or lack of firmness. Also, avoid those with brownish-black stems but appear fresh, as they may have been soaked or treated with chemicals.

How to make black grape ice cream

  • Prepare the grapes

    First, you will put 2 tablespoons of dried grapes into a bowl of water and soak for about 10 minutes.

    With fresh black grapes, after purchasing, soak them in salt for about 20 minutes, then wash thoroughly and drain.

  • Blend the grapes

    Next, add 200g of cleaned black grapes into the blender and blend until the mixture still has some bits of grape skin and is not completely smooth.

  • Cook the grape sauce

    After blending the grapes, pour the mixture into a pan, add 4 tablespoons of sugar, and stir well.

    Cook the grape and sugar mixture for 5 minutes over medium heat until it thickens, then turn off the heat and pour the grape sauce into a bowl to cool.

  • Whip the whipping cream and mix in the grape sauce

    Next, pour 250ml of whipping cream into a bowl and use a hand mixer to whip the cream until soft peaks form, which indicates it’s ready.

    Then, add 4 tablespoons of condensed milk and mix well, followed by half of the grape sauce, and continue to use the mixer to blend thoroughly.

    Finally, add half of the soaked raisins to the mixture and use a spatula to mix until the grape cream is completely combined.

  • Pour into mold and freeze

    You proceed to pour the whipped grape cream mixture into the mold and use a flat spatula to level the surface of the cream in the mold.

    Next, you scoop half of the remaining grape sauce on top and use a stick to create a swirl pattern on the surface of the cream.

    Finally, you sprinkle the remaining half of the dried grapes on top and close the lid, placing the ice cream mold in the freezer for about 6 – 8 hours until the ice cream is firm and ready to enjoy.
