Prepare the ingredients
After purchasing the bitter melon, use a knife to cut it lengthwise, removing all the pulp and seeds inside, then slice it thinly. After that, wash the sliced bitter melon with clean water about 3 – 4 times to reduce the bitterness, then let it drain.
Tip: To better eliminate the bitterness, you can soak the sliced bitter melon in a bowl of ice water for about 3 – 5 minutes.
Put 300g of pork into a small bowl, add a little salt, and then use your hands to massage the surface of the meat to remove any unpleasant smell. After that, rinse with clean water, drain, and cut into thin slices.
Peel the green onions, remove the roots, and wash them clean. Crush the bulb part and cut the green part into small sections.

Stir-fry Bitter Melon with Pork
Heat 2 tablespoons of cooking oil in a pan over medium heat. Then, add 2 chopped green onions and sauté until golden.
Next, add the thinly sliced pork and stir-fry evenly over medium heat for about 3 – 5 minutes. Once the pork is half-cooked, add all the thinly sliced bitter melon along with 1/2 teaspoon of sugar, 1 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate, and stir-fry for another 3 – 5 minutes to let the ingredients absorb the seasoning.
Finally, sprinkle in 1/2 teaspoon of ground pepper and chopped green onions, then mix well. Adjust the seasoning to taste before turning off the heat.
Tip: Depending on the thickness of the bitter melon and your preference for crunchiness or softness, adjust the stir-frying time accordingly!
