How to choose fresh pineapple
- Choose pineapples that are bright yellow from the crown to the end or have a few slightly green spots. These are ripe fruits with sweetness.
- Avoid choosing pineapples that are still green, as these are unripe and sour.
- Short pineapples (round shape) have more flesh than long pineapples (long cylindrical shape).
- Choose pineapples with large and sparse eyes to keep the thick core after peeling.
- Choose pineapples that are neither too hard nor too soft, without mold or leakage on the skin.
- Don’t forget to observe the top of the pineapple; fresh pineapples have bright green tops.

How to make Pineapple Peanut Candy

Prepare the ingredients
Peel the pineapple and remove the eyes of the fruit.
Divide the pineapple into 4 parts, cutting off the hard core.
Slice the pineapple into thin pieces along the grain of the fruit. This will help the candy become more chewy and flexible after cooking.
Peel the ginger and cut it into thin strips.
Tip for quickly peeling pineapple:
- First, cut the pineapple vertically from top to bottom into 4 equal parts.
- Continue cutting along the length of the pineapple piece, stopping at the end of the fruit and cutting firmly to separate the flesh from the skin.
- Avoid cutting too close to the skin to prevent remnants of the eyes from remaining. Finally, cut into smaller pieces as needed.

Cook the pineapple and ginger
First, add the chopped pineapple and ginger to the pan, add 350g of sugar, and mix well for the ingredients to blend together. You can also adjust the amount of sugar to suit your taste.
Here’s a tip:
- You can add more ginger if you prefer a spicier candy.
- Additionally, you can adjust the amount of sugar to suit your taste.
Next, place the pan on the stove, cook the mixture over high heat until the sugar completely dissolves, then add 1 teaspoon of salt and stir well.
When you see the mixture starting to boil, reduce the heat to medium, add about 30ml of lemon juice to the pan, and mix well.
Then, reduce the heat to low-medium and stir until the pineapple jam thickens and turns dark brown as shown in the picture, then add 300gr of peanuts and half of the roasted sesame seeds, mixing well. Stir for another 10 – 15 minutes until the jam is chewy and dry, then turn off the heat.
Note: The jam stirring process usually takes about 2 hours. During the first hour and a half, keep the heat at medium. For the last 30 minutes, reduce to low heat.

Pour the candy into molds
Prepare a layer of parchment paper on a tray or plate to prevent the candy from sticking.
Then, pour the candy onto the prepared tray, spreading the mixture evenly. Next, sprinkle the remaining roasted sesame seeds on top of the candy.
Lay another layer of parchment paper on top, and use a glass to roll over the paper to press the candy down, helping to make it flat and more even.
Note: You should wait for the candy to cool completely before cutting it. Do not cut while the candy is still hot as it will be harder to stick together.

Cutting the candy
Once the candy has completely cooled, remove the parchment paper. Apply a little cooking oil to the knife and proceed to cut the candy.
Cut the candy into pieces about 4 – 5cm for easy eating.

The candy is chewy, fragrant with the smell of roasted sesame.
