How to choose fresh, delicious avocados

How to make Avocado Balls with Coconut Milk

Mix and knead the avocado ball dough
Put into a bowl successively 350g of glutinous rice flour, 100g of tapioca flour, and 40g of sugar, and mix well.
Then, peel and remove the pit from 1 avocado, filter out the flesh and add it to the bowl of flour, then use your hands to mash and mix until the avocado is blended with the flour.
Slowly pour about 50ml of hot water into the bowl of flour, continue to knead with your hands until the dough is smooth and forms a unified mass.
Note: You should add hot water gradually to knead slowly for easier adjustment of the dough’s consistency; you can add or reduce hot water so that the dough is neither too dry nor too wet! -
Shape and boil the butter balls
Use your hands to pinch off small pieces of dough and roll them into nice round balls, continuing until all the dough is used up.
Next, place a pot of water on the stove, bring it to a boil, then drop the dough balls in.
Boil until the butter balls become translucent and float, indicating they are cooked. Remove the butter balls and immediately place them into a bowl of ice water to prevent them from sticking together and to maintain their chewiness.

Cook the coconut milk and finish
In another pot, add 250ml of coconut water, 250ml of coconut milk, 50gr of palm sugar, 2gr of salt, then drop in a pandan leaf and stir well. Simmer the mixture over medium heat until it boils, then turn off the heat.
You scoop the avocado balls into a bowl, pour the cooked coconut milk over, and decorate on top with a bit more shredded coconut to enjoy.
