Ingredients for Spicy Stir-fried Intestine Sausage Serves 4 people

Intestine sausage 500 gr Lemongrass 2 stalks Ginger 2 pieces Garlic 2 cloves Bird’s eye chili 1 piece Bell pepper 3 pieces (green and red) Onion 1/2 bulb Chili sauce 2 tablespoons Annatto oil 1 tablespoon Oyster sauce 1 tablespoon Dark soy sauce 1 tablespoon Soy sauce 1 tablespoon Salt/ sugar a little

How to choose fresh and clean sausage casing

  • To select fresh and clean sausage casing, you should choose those with a shiny, fresh color. When pressed, they should be elastic, without any slimy texture or unpleasant smell.
  • Moreover, you should select sausage casings that are round and plump, with a pinkish-white color, and the inside should be milky white as this indicates delicious sausage casing with a fatty taste when eaten.
  • Additionally, you should avoid purchasing sausage casings that are dark in color, soft, and slimy, as these indicate the sausage is no longer fresh.
  • To prevent the sausage casing from being tough and bitter when eaten, you should avoid buying sections that are large in diameter, thin, and flat, with the liquid inside already turning yellow.

How to cook Spicy Stir-fried Intestines

  • Prepare the intestines

    After purchasing, wash the intestines thoroughly with water; if you prefer, you can remove all the fat.

    Next, to eliminate the odor of the intestines, place them in a pot of boiling water with a little salt, a piece of fresh ginger, and 2 stalks of lemongrass, and boil for about 5 minutes.

    Then, to keep the intestines crunchy and chewy, remove them and immediately soak them in a bowl of cold ice water for about 10 minutes.

    Finally, rinse the intestines with clean water about 2 – 3 times, drain, and cut them into pieces about the length of a finger.

    • Step 1: Rinse the intestines under running water, turning the insides out and removing all the fat.
    • Step 2: Boil the intestines with a little salt, ginger, and white wine to eliminate the unpleasant smell of the organs.
    • Step 3: After the intestines are cooked, immediately transfer them to a bowl of cold water with a little vinegar to maintain their crunchiness and whiteness.

  • Stir-fry the pig intestines

    You put a pan on the stove, add 1 spoon of annatto oil along with minced garlic, ginger, and chili, sauté until fragrant and golden.

    Next, add the pig intestines and stir-fry over high heat for about 3 minutes, making sure to stir continuously so that the intestines cook evenly without burning.

    You add 2 tablespoons of chili sauce, 1 tablespoon of oyster sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of sugar, 1 tablespoon of soy sauce into a bowl, mix well, then pour this mixture into the pan with the pig intestines, adjusting the heat to medium and stir-frying for an additional 8 minutes.

    Finally, add 3 green and red chili peppers chopped, and half an onion cut into wedges, stir well and season to taste, then turn off the heat and enjoy!
