Scallions 300 gr Pig intestines 500 gr Garlic 2 cloves Chili 1 piece Turmeric 1 root (small root) Cooking oil 2 tablespoons Calamondin lime 2 pieces Flour 1/2 cup (rice bowl) Fish sauce 5 tablespoons Common seasoning a little (Sugar/ seasoning powder/ salt)

  • Good pig intestines are those with small intestinal tubes, thick surface, and pinkish-white color.
  • Choose intestines that, when pressed, release a milky white liquid, indicating they are freshly slaughtered and still fresh.
  • Buy intestines that still have elasticity when pressed and have no strange odors.
  • Do not buy pig intestines with large intestinal tubes, and the outer skin has a bluish-white color as they are from older pigs and will taste bitter and not good.
  • Do not choose intestines that have dark liquid inside, have strange smells, or are slimy.

How to choose good pickled shallots

  • You should choose pickled shallots that are of moderate size, with a shiny, plump skin that is intact.
  • Good pickled shallots have white skin, bright color, and a slightly pungent smell when sniffed.
  • To make the dish more aesthetically pleasing, you should select pickled shallots with clearly defined waist and uniform sizes.
  • Avoid buying pickled shallots that are bruised, have soft or mushy skin as these are spoiled shallots.

How to make Stir-fried Pickled Shallots with Pork Intestines

  • Prepare the pork intestines

    After purchasing, cut the intestines into segments about the length of a hand span, and turn them inside out. Add 1/2 cup of flour (rice bowl), juice from 2 calamondins (or 1 lemon), 1/2 cup of salt (rice bowl), and mix well for about 5 minutes.

    Soak the intestines in the mixture of flour, salt, and calamondin juice for about 30 minutes, then rinse several times with clean water, remove the intestines, and let them drain.

    Put the intestines in a pan, add 4 tablespoons of fish sauce, and boil for about 3-5 minutes until the intestines are firm, then remove and place in a bowl of ice water, soak for about 10 minutes.

    Remove the intestines, let them drain, and then cut them into bite-sized pieces.

    Peel the shallots to remove the dirt, cut off the roots and any old leaves, then wash them clean. Separate the leaves from the bulb of the shallots.

    After cleaning the pig intestines, marinate them with 1/2 of the chopped garlic and chili, fresh turmeric, 2 teaspoons of seasoning powder, 1/2 teaspoon of salt, 4 teaspoons of sugar, 1 tablespoon of fish sauce, mix well and marinate for about 30 minutes.

    In a pan, add 2 tablespoons of cooking oil, heat the oil and then add the remaining chopped garlic and chili, sauté until fragrant. Then add the marinated pig intestines, stir-fry quickly over medium heat for about 5 minutes, then add 1 bowl of water (rice bowl). Simmer on low heat until the sauce thickens.

    Next, add all the scallion bulbs and leaves, stir-fry evenly for about 5 – 10 minutes until the scallions are cooked. It’s advisable to taste the seasoning and turn off the stove.
