Peel the onion, cut off the root, then wash it thoroughly and let it drain. Peel the carrot, wash it clean, and then place it in a basket to drain. Wash the mustard greens directly under running water to remove all dirt, then let them drain.
Dice the onion, carrot, and mustard greens and place them in a bowl. Next, peel the shallots, chop them finely, and add to the bowl. Similarly, peel the green onions, wash them clean, and chop them finely like the shallots.

Beat the Eggs with Seasoning
Crack the eggs into a bowl and season the eggs with 1/3 teaspoon of monosodium glutamate, 1/2 teaspoon of fish sauce, and a little ground pepper.
Finally, add the chopped green onions to the bowl and use chopsticks to mix well until the seasoning is dissolved.
