How to make Mixed Caramel Chè

Making flan – caramel cake
Add 50g of sugar and 20ml of water into a pot, cook until the sugar turns brown, then add 1/4 teaspoon of lemon juice and turn off the heat. After that, pour the syrup into the mold.
In a bowl, combine 100ml of condensed milk and 300ml of unsweetened fresh milk, stir well, and warm the mixture.
Beat 2 eggs with 1 teaspoon of vanilla, then add the warm milk mixture and stir well. Next, strain through a sieve for smoothness and pour into the mold.
Add water to about 1/4 of the rice cooker, press the Cook button and wait for the water to boil. Then, place the steaming tray inside, cover with a thick cloth, and place the flan mold on top. Close the rice cooker lid and steam the flan for 5 – 7 minutes.
After steaming the cake, use a knife to cut around the edges, place a plate on top of the mold, and flip to remove the cake.

Making pear jelly
Peel 1 pear, then dice it.
Remove the pear and place it in 3 bowls of water with food coloring: blue, yellow, and red, and mix well. Marinate the pear for 1 hour to absorb the color.
Add 3 teaspoons of tapioca flour to each portion of pear and mix well.
Boil the pear jelly in boiling water until the outer layer of tapioca flour becomes transparent, indicating it is cooked.
Briefly blanch in a bowl of cold water, then remove and let drain. Continue to add 1 tablespoon of sugar to each portion of jelly and mix well.
Tip: While cutting the pear, remember to soak it in a bowl of water to prevent it from browning!

Making pandan jelly and milk jelly
Put 500ml of water and 5g of agar powder in a pot and bring to a boil. Then, add 150g of sugar and stir well, then turn off the heat.
Pour the agar mixture into 2 molds, one mold mixed with 1 tablespoon of condensed milk and the other mold mixed with 2 tablespoons of pineapple juice. Then stir well and let the jelly set.

Making basil seeds and various types of pearls
How to make basil seeds:
- Put 1 tablespoon of basil seeds and 50ml of water into a bowl and soak until the basil seeds expand.
- Then, add 5ml of strawberry syrup to the bowl of basil seeds and mix well.
How to make black pearls:
- Put 200g of glutinous rice flour, 50g of cocoa powder, and 50g of tapioca flour into a bowl and mix well.
- Gradually add a little water at about 60 – 70 degrees Celsius into the flour bowl and knead with your hands until the dough is smooth and elastic.
- Cut the dough into small bite-sized pieces and roll them in tapioca flour once more to reduce stickiness.
- Boil the pearls for about 10 – 15 minutes until they float, then turn off the heat and continue to cover and steam for another 5 – 7 minutes.
- Finally, rinse the pearls with cold water to finish.
How to make butterfly pea flower pearls:
- Blanch butterfly pea flowers in boiling water for about 5 minutes to extract the color.
- Add sugar, agar powder, and jelly powder into a bowl and mix well.
- Put 800ml of water and the mixed agar into a pot, stir well, and bring the mixture to a boil.
- Next, add the butterfly pea flower water into the pot, stir well, and let it cool for about 10 minutes.
- Scoop the jelly into a plastic bottle and then seal it tightly.
- Prepare a bowl of ice water, pour in cooking oil, and drop the jelly mixture into the bowl.
- After finishing, wash the jelly until the oil is completely removed, add 1 tablespoon of sugar, squeeze a little lime juice, and mix well to complete.
