    Add the chopped chicken meat, wood ear mushrooms, 1/2 of the chopped shallots, 1 teaspoon of seasoning, and 1 teaspoon of pepper into a bowl, mix well, then marinate for about 15 minutes for the chicken to absorb the spices.

    Place the chicken filling at one corner of the wrapper, then roll it up from the front. Leave a small triangular corner at the front. Flip the wrapper over, and pinch the two ends together. Continue wrapping until all the ingredients are used up.

  • Making the broth

    Place a pot on the stove, add 2 tablespoons of cooking oil. Wait for the oil to heat, then add the remaining minced shallots and sauté until fragrant.

    Next, add the beetroot and stir for about 3 minutes. Then pour about 1 liter of water into the pot, add the chicken bones, 3 shallots, and 1 tablespoon of salt, and cook until the water boils for about 5 minutes before adding the carrots and potatoes.

    Simmer the vegetables until soft for about 20 minutes over medium heat. Next, season with 1 tablespoon of seasoning and 1/2 tablespoon of salt. Remember to skim off the foam to keep the broth clear.

    Finally, taste the broth and adjust the seasoning to suit your family’s preference, then turn off the heat.

    Place the pot on the stove, add enough water to the pot, about 2/3 full, and bring it to a boil. Once the water is boiling, drop the wontons in.

    When the wontons start to float to the surface, continue to let them float for about 7 minutes to cook the filling inside. Then, remove them and let them drain.

    Put the wontons in a bowl, pour in the hot broth filled with vegetables. Season with a little pepper and chopped green onions on top, and you can enjoy it right away.
