How to choose fresh shiitake mushrooms

- For mushrooms with a dark brown color, check by cutting into the cap; if a milky white substance oozes out, it is poisonous.

Prepare the ingredients
The scallop meat you bought should be mixed with 1 spoon of salt and then rinsed 2 – 3 times with water to clean, then let it drain.
Shiitake mushrooms should be washed clean, drained, and then sliced lengthwise. Cordyceps mushrooms should be washed clean, drained, and then the stems should be removed.
Ginger should be peeled and sliced. Bird’s nest should be soaked in water for about 8 hours or overnight.

Cook the soup
You place a pot on the stove and turn on medium heat, add 1 liter of chicken broth and bring to a boil.
When the broth boils, add 50g of goji berries, 100g of Chinese yam, 50g of red dates, sliced ginger, the prepared shiitake mushrooms, and the prepared cordyceps mushrooms, bring to a boil again, then reduce the heat, cover, and simmer for 20 minutes.
