Ingredients for Indian Beef Curry Serves 4

Beef brisket 1.5 kg Curry powder 1 packet (about 1 tablespoon) Curry leaves a few Lemongrass 4 stalks Horn chili 1 piece Onion 2 bulbs Garlic 4 cloves Shallots 12 bulbs Annatto oil 2 tablespoons Cooking oil 2 tablespoons Common seasoning a little (salt/ sugar/ seasoning powder)

How to choose fresh and delicious beef

  • For this dish, you should choose beef brisket, as the firm brisket meat with tendons will make the curry more flavorful.
  • Good beef has a bright red color, fine meat fibers, light yellow fat, and when pressed feels firm and elastic, with a distinct beef smell.
  • If the meat is dark red, with thick fibers and dark yellow fat, it is old beef, which will be very tough. If the meat is dark red, with white fat and has a slightly fishy smell, it is buffalo meat.
  • In addition, do not buy if you see the beef is dull in color, soft and watery, or has a rotten smell.

  • Prepare the Ingredients

    Place a pan on the stove and add 1 tablespoon of cooking oil. When the oil is hot, add chopped onions, 10 peeled shallots, curry leaves, and smashed lemongrass and sauté over medium heat for about 3 – 4 minutes until fragrant.

    Add water to cover the beef, then cover and cook on low heat for about 1.5 hours until the beef is tender.

    Once the beef has cooked for the right amount of time, check if it is tender, then season to taste, and add sliced onion to cook for about 1-2 minutes before turning off the heat!
