  • Delicious tofu usually has an ivory white color and a fragrant smell, with the characteristic creamy flavor of soybeans. When picked up gently, it feels elastic, smooth, and not dry or hard.
  • Avoid choosing tofu pieces that are yellow or slightly yellowish as these may contain gypsum or have been stored for a long time.
  • Additionally, tofu with a faint smell like lime, which tastes bland, dry, and spongy may contain impurities and should also not be purchased.

How to choose crispy and delicious chicken thigh mushrooms

  • Fresh chicken thigh mushrooms will have bright colors, measuring 12 – 15cm in length. You should avoid buying mushrooms that are too long as the inside will be hollow and lack fresh flavor.
  • If they are fresh mushrooms, there will be a thin layer of silk on the top of the mushroom cap. The stem should be white, looking and feeling very firm, with uniform color.
  • You should choose mushrooms with a dome-shaped cap, brown color, shiny, with no scratches or tears, and without blemishes or wrinkles.
  • If still fresh, chicken thigh mushrooms will have a very distinctive aroma similar to almonds.
  • You should not choose mushrooms with an unpleasant odor or that are bruised.

  • The shape of dried shiitake mushrooms is similar to that of fresh shiitake mushrooms, but they are dried, so they are lighter.
  • You should choose mushrooms that are not broken and have a light brown cap because there is basically no significant color change when the mushrooms are dried.
  • Pay attention to the smell of the mushrooms. Do not choose mushrooms that are moldy or have strange odors, and also check for white mold spots.

How to prepare Vegetarian Szechuan Tofu

  • Prepare the ingredients

    After purchasing the chicken thigh mushrooms, cut off the stems and soak them in water for about 5 – 10 minutes, then take them out, wash thoroughly, and drain. Next, use a knife to chop finely.

    Soak the dried shiitake mushrooms in water for about 30 minutes until they soften, then use a knife to cut off the stems, wash them again with water, and chop finely.

    For the green beans, remove both ends and strip off the fibers on both sides, soak them in diluted saltwater for about 10 minutes, then take them out, wash thoroughly, and drain. Then, use a knife to cut the green beans into small cubes.

    Next, wash the bell peppers and dice them.

    Cut off the roots of the green onions, wash them, crush the green onion tops, chop them, and cut the green onion leaves into sections.

    Rinse the tofu briefly in water, then cut it into bite-sized pieces.

  • Stir-fried Vegetarian Szechuan Tofu

    You place a pan on the stove, add 1/2 tablespoon of annatto oil, heat it up, then add chopped green onions to fry until fragrant.

    When the green onions become aromatic, add all the chopped chicken mushrooms and shiitake mushrooms, stir-frying over high heat for about 5 – 10 minutes until the mushrooms are firm.

    Next, add the green beans and diced bell peppers, stir well for another 5 minutes.

    Tip: To prevent these ingredients from releasing water and diminishing the dish’s flavor, you should stir-fry the vegetables over high heat.

    Then, season the pan with 1 teaspoon of vegetable seasoning, 2 teaspoons of soy sauce, and 1/4 teaspoon of rock sugar, stir well, and continue to fry until the ingredients are evenly cooked.

    After about 8 minutes, add a little water to cover the mushrooms, then add 1/2 teaspoon of chili paste and continue to simmer over medium heat until the water in the pan boils.

    Next, add the tofu, reduce the heat, and cook for another 15 minutes until the water in the pan thickens and the seasoning is absorbed by the tofu.

    Tip: You need to stir the tofu gently because if you stir too hard, the tofu will break apart.

    Finally, just adjust the seasoning to your taste and turn off the heat.
