How to choose fresh ingredients
How to choose fresh salmon
- Fresh salmon meat is usually dry, with a bright pink or orange color, and the fat marbling on the meat is light-colored and evenly distributed.
- At the same time, the firmness of fresh salmon meat is also very good. You can check by gently pressing your hand on the meat. If a dent appears on the surface and quickly disappears, that is the salmon meat you should buy.
- Avoid buying salmon meat that is discolored, leaking fluid, has brown spots on the fat marbling, or emits a strong odor, as this usually indicates the fish has spoiled.
How to choose fresh zucchini
- When choosing fresh zucchini, you should pay attention to the color, shape, firmness, and the stem to judge the freshness of the zucchini.
- Generally, fresh and delicious zucchini are those that are straight, firm to the touch, have a shiny green color, and are neither too small nor too large. Additionally, the stem of the zucchini should still be fresh and intact.
- You should avoid buying zucchini that has scratched skin, is bruised, has worm damage, or has black spots all over the skin.

Cook the sauce
Add sliced ginger and garlic, 1/2 cup of brown sugar, 1/2 cup of soy sauce, 2 tablespoons of jelly, 1/3 cup of cooking wine, and gently stir well.
Then, place the pot on the stove and bring the sauce to a boil over high heat for 5 minutes.
Next, reduce the heat to low and cook the sauce for another 15 – 20 minutes.
After this time, your sauce will begin to thicken. At this point, turn off the heat, add 1 teaspoon of sesame oil to the pot and stir well.
Once the sauce in the pot cools down, thickens, and stops bubbling, you can transfer it to a bowl.
-
Marinate the salmon
Sprinkle about 1/4 teaspoon of salt and 1/4 teaspoon of pepper on the surface of the salmon.
Place the zucchini slices on a plate, drizzle 2 tablespoons of cooking oil, 1/5 teaspoon of salt, and 1/5 teaspoon of pepper evenly over the zucchini.
Put the plate of salmon and zucchini into the refrigerator for 15 minutes to allow the ingredients to absorb the seasoning.
-
Grill the fish
Prepare a clean plate and add 2 – 3 tablespoons of cooking oil to it. Turn on the oven and wait until it heats up, then reduce to medium heat and brush the grilling rack with oil.
Dip both sides of the fish into the plate of oil, then place it on the oven. Next, place the zucchini slices on one side of the oven to grill.
After grilling the zucchini for 3 – 4 minutes, flip the zucchini and continue grilling for a similar amount of time, then arrange it on a plate.
Grill the fish for 10 – 12 minutes, then flip it to ensure the fish is cooked evenly, and the skin is also grilled crispy. Depending on the thickness of the fish, you can adjust the grilling time accordingly!
After grilling, arrange the fish and zucchini on a plate, drizzle some sauce over the dish, and get ready to enjoy.
Tip: You should only use about 1/3 of the sauce for the meal. The remaining sauce can be stored in the refrigerator. Whenever you want to use the sauce, just heat it in the microwave and it will be ready to use!
