How to choose good dried fish

How to prepare Fried Dried Lù Đù Fish with Vinegar and Sugar

Prepare the dried fish
To reduce the saltiness, soak the dried fish in a mixture of diluted salt water for about 30 minutes after rinsing it clean, then rinse it again with clean water and drain.

Mix vinegar and sugar
First, wash the chili and slice it, peel the garlic, and thinly slice 3 cloves while mincing the remaining 3 cloves.
Next, add 80ml of vinegar, 2 tablespoons of sugar, 1/2 tablespoon of monosodium glutamate along with the sliced garlic and sliced chili into a bowl, then use a spoon to stir well until the ingredients dissolve.

Dry frying
Place a pan on the stove, add 3 tablespoons of cooking oil into the pan, wait until the oil is hot, then add the dried fish, frying over medium heat for about 3 minutes. Turn the dried fish once and continue doing this about 2 – 4 times until the fish is golden brown on both sides, then turn off the heat and remove the fish.
Tip: To reduce the splatter of oil, make sure the fish is completely dry before frying! -
Frying with vinegar and sugar
Next, you pour out the oil used for frying the dried fish, then place the pan back on the stove and add 1 tablespoon of cooking oil into the pan. Wait for the oil to heat up, then add the minced garlic.
Sauté over high heat until the garlic is fragrant, then add the fried dried fish and the bowl of vinegar and sugar that you just mixed, reduce the heat to low and turn the fish evenly so that it absorbs the mixture.
Then fry and turn the fish for about 7 minutes until the vinegar and sugar mixture thickens and turns a brown color, then add about 1 teaspoon of ground pepper and turn off the heat.
