How to Choose Fresh Clean Eggs
- For industrial eggs, you need to carefully observe the eggshell. If the eggshell is dark brown, evenly colored, without cracks and no black spots, then it is a fresh egg.
- Additionally, you can touch the surface of the eggshell; if the surface is rough and slightly gritty, it is a fresh egg, while a smooth surface indicates the egg has been stored for a long time.
- You should avoid choosing eggs with a pale shell color and many black spots as these are eggs that have been stored for a long time.

How to Make Cheese Whipped Cream with a Blender

Whip Eggs and Sugar
First, you add 3 egg yolks and 50g of sugar into the bowl, using a whisk to beat the egg yolks with the sugar.
Then, whip the eggs until the yolks turn light yellow, lifting the whisk to see the eggs flow down in a ribbon-like shape.

Boil fresh milk
You pour 150ml of fresh milk into a pot and heat it over low heat, stirring continuously until it just starts to boil, then turn off the heat.
Note:- When boiling milk, you should stir continuously and evenly to prevent the milk from burning at the bottom of the pot.
- Do not cook until the milk boils vigorously as it will cause the milk to separate and form a skin!

Cook the mixture of milk, eggs, and cornstarch
Slowly pour the boiled fresh milk from step 2 into the bowl containing the egg yolks, stirring continuously to prevent the eggs from cooking. Then sift 1/2 tablespoon of cornstarch into the mixture, using a whisk to mix until the starch is completely dissolved.
Next, place the mixture back on the stove and heat over low heat, stirring continuously until the mixture boils, then turn off the heat. Finally, pour the mixture into a bowl and let it cool!

Making whipped cream cheese
First, add 300g of whipping cream into the blender, blend until the cream is soft and fluffy, and when tilted, it is no longer liquid. Next, add the cooled mixture of milk and eggs along with 4 pieces of cheese, and continue blending until well combined.
Finally, pour the cream mixture into a tray or container, and place the cream in the freezer for about 6 hours to freeze.
Tip:
- You should keep the whipping cream really cold before blending, this way the cream will whip better.
- Make sure the mixture of milk and eggs is completely cool before pouring it into the whipped cream to avoid making the whipped cream runny!
