- All-purpose flour (type 11 flour) is a type of flour that contains a high protein content, about 10% – 12%. This flour is commonly used to make bread and noodles.

How to choose fresh and quality eggs?
- To choose fresh and quality eggs, first, you should observe the egg shell. The egg shell should be dark in color, without black spots, and the surface of the shell should be slightly rough.
- Next, hold the egg close to your ear and shake it gently; if you cannot hear the egg inside moving, it means this is a fresh egg.
- On the contrary, you should avoid buying eggs that are pale in color, have a smooth shell, or have black spots because these are eggs that have been stored for too long and may be spoiled inside.
How to make Chinese Fresh Noodles

Mixing and kneading the dough
First, add 30gr flour and 1 teaspoon of salt into a bowl of all-purpose flour and then mix well with a spoon. The flour will help make our noodles chewier and tastier.
Next, crack 3 eggs into the bowl, add 1/4 teaspoon of turmeric powder, and then stir well with a spoon until dissolved. After the eggs are beaten, add the entire mixture of flour that was just mixed in and stir well.
Finally, use your hands to knead the dough for about 5 – 10 minutes until the dough comes together into a smooth, elastic ball, then wrap it in plastic wrap and let it rest for about 30 minutes for the flour to rise.
Tip: If you find the dough a bit dry while kneading, you can add a little water and continue kneading. Conversely, if the dough is too wet and cannot be kneaded, add a little dry flour and continue kneading! -
Forming the noodle shape
After 30 minutes of dough resting, take the dough out and knead it by hand for another 2 – 3 minutes to make the dough smoother and more elastic.
Tip: To prevent the dough from sticking to your hands, you should apply a little dry flour on your hands before you start kneading!After the dough has been kneaded, we will use a knife to divide the dough into smaller pieces. Next, apply a little dry flour on the rolling pin and roll the dough thin.
Once the dough is rolled thin, apply a little dry flour on top, then fold it and use a knife to cut it into noodle strands to complete.
