  • Choose Hanoi plums that have shiny, plump skin, and particularly, are covered with a layer of white powder; that is good Hanoi plums.
  • Hanoi plums will be sweet and crunchy if the skin is a mix of green and red; the riper the plum, the redder it will be; conversely, if the plum is green, it is sour.
  • Gently squeeze the Hanoi plum with your hand; avoid buying overripe plums that are too soft, and if there are bruises, it means those Hanoi plums are about to spoil and cannot be used.

    Put the Hanoi plums into the bowl, then add 0.5kg of sugar and mix well, letting them marinate for 7 – 8 hours.

    Turn on the stove over medium heat, add the marinated Hanoi plums including both the plums and the released juice along with 3 tablespoons of lemon juice, and 0.25 tablespoons of salt, to candy for 15 minutes. While candying, be careful not to stir the plums!

    Place each Hanoi plum on a rack, then sprinkle a little chili powder on top of the plums, put them in the oven, and proceed to dry the plums for 90 – 120 minutes at 190 degrees Celsius until the plums are dried to your liking.
