For shelled walnuts

  • For the walnut meat that has been removed from the shell, you need to choose types that are firm and have a full kernel.
  • The kernel must be intact, not cracked or broken, and still has its skin layer. When the skin layer is removed, fresh walnuts will have a creamy white color, dry and not oily.
  • If possible to sample, you should choose those that are still hard and crisp, and avoid those that are soft or mushy. Also, be careful not to select any that are infested, moldy, have unusual colors, or have shriveled or oily kernels.

    Mix the walnuts and almonds and divide them into 2 batches to blend in a nut milk maker or blender, adding 600ml of hot water at about 60 degrees Celsius each time. Cover and blend until the nuts are finely ground.

  • Making walnut milk

    Strain the milk through a sieve or filter bag about 2 – 3 times for smoothness, after straining the milk, add 130g of white granulated sugar and 5g of vanilla powder to dissolve so that the mixture blends together.
