Ingredients for Fried Tofu with Fish Sauce Serves 4

Yellow tofu 200 gr Fresh chili peppers 2 pieces Dried garlic 3 cloves Dried shallots 2 cloves Fish sauce 3 tablespoons Chili sauce 3 tablespoons Cooking oil 230 ml Common spices A little (pepper/ sugar/ MSG)

How to Choose Good Quality Tofu

  • When buying tofu, pay attention to choose pieces that are off-white, soft, slightly wobbly, and have a faint characteristic smell of soybeans.
  • Good tofu will feel light in your hand, smooth to touch, and will easily break if held firmly. If the piece of tofu is hard, heavy, and firm, it should not be purchased.
  • You should also avoid buying tofu that is yellowish, has no smell, or smells of lime, as this tofu contains a lot of gypsum, which will taste bitter and not delicious when cooked.

How to prepare Fried Tofu with Fish Sauce

  • Fry the tofu

    After buying the tofu, wash it clean with water and let it drain.

    Place a pan on the stove, add 200ml of cooking oil, wait for the oil to heat up, then add the tofu and fry until golden brown on both sides over medium heat; deep frying will make the tofu richer and more fragrant.

  • Make the sauce for frying the tofu

    Next, take the dried onion and garlic, peel them, wash them clean, and then chop them finely.

    Take 1/2 of the amount of onion and garlic, mix with 3 tablespoons of fish sauce, 2 tablespoons of sugar, 1/2 teaspoon of monosodium glutamate, 3 tablespoons of chili sauce, 1/2 teaspoon of ground pepper, 2 minced chili peppers, 3 tablespoons of water, and stir well to create a thick mixture.

    Place a pan on the stove, add 30ml of cooking oil, and sauté the remaining 1/2 minced onion and garlic until fragrant over medium heat. Continue to add the fried tofu into the pan, then pour in the mixed braising sauce. Remember to lower the heat and braise until the mixture reduces, allowing the tofu to absorb the flavor.

    When the tofu in the pan has nearly absorbed all the water, taste and adjust the seasoning, then turn off the heat.

    So the dish of tofu braised in fish sauce is now complete. The fragrant aroma from the tofu stimulates the taste buds.

    The tofu is soft, evenly infused with spices, with a slight hint of heat from pepper and chili, served with white rice is just perfect.
