Next, to eliminate the unpleasant smell of dồi, place the dồi trường into a pot of boiling water with a bit of salt, 5 grams of fresh ginger slices, and 1 teaspoon of white wine and boil for about 3 – 5 minutes.
Once the dồi is cooked, to maintain its crispiness, immediately soak it in a bowl of cold ice water for about 10 minutes. You can also add a bit of vinegar to make the dồi whiter.
Finally, rinse the dồi with clean water about 2 – 3 times and then take it out to a basket to drain.
