Ingredients for Beer Steamed Beef Shank Serves 2

Beef shank 400 gr Beer 500 ml Dried lemongrass 3 gr (or 1 stalk of smashed lemongrass cut into 3cm pieces) Ginger 40 gr Onion 1/2 bulb Garlic 3 cloves Green or red chili 1 piece Pepper powder 1/3 tablespoon Cooking oil 2 tablespoons Common spices a little (Salt/ sugar/ monosodium glutamate/ seasoning powder)

How to choose fresh beef shank

  • You should choose pieces of meat that are bright red with white fat marbling; when pressed, they should have firmness and elasticity. That is fresh beef.
  • For the beef shank, prioritize choosing the shank with more marbling, more fat, thin marbling, and clear lines when sliced for better beer steaming.
  • Do not choose beef shank that is pale green, dark red, has an unpleasant odor, and shows tiny white spots on the meat.
  • To buy good and safe beef shank, you should purchase from reputable sources with clear origins and expiration dates.

How to choose quality beer

  • Quality beer is beer that is straw yellow, bright yellow, and clear without sediment at the bottom of the bottle. Additionally, when poured, it should have tiny bubbles rising from the bottom of the glass, with bubbles that dissolve slowly for about 4 – 5 minutes.
  • Pay attention to the taste of the beer; real beer has a slightly bitter taste and a distinctive aroma of fermented barley.
  • When selecting, do not forget to check the labels. Avoid buying bottles with faded or erased labels.

  • Prepare the ingredients

    First, wash the beef shank with water, then use paper towels to dry it and place it in a bowl.

    Next, use a knife to peel the ginger, wash it, and cut it into thin slices. For the chili, remove the stem, wash it, and slice it thinly.

    For the onion, peel it, wash it, and chop it finely.

    Dry lemongrass should be soaked in hot water for about 5 – 10 minutes to soften.

    Next, peel the garlic, wash it, and crush it (note not to chop it finely).

  • Marinate the beef brisket

    You mix the prepared beef brisket with 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning, 1 teaspoon of salt, 1 teaspoon of sugar, 1/3 tablespoon of pepper, dried lemongrass that has been soaked, sliced ginger, minced onion, sliced chili, and crushed garlic.

    Next, you use food wrap to cover the bowl tightly and place it in the cool compartment of the refrigerator for about 1 day or at least about 4 hours.

    After marinating, take the beef brisket out of the refrigerator and place a pot on the stove. Add 2 tablespoons of cooking oil to the pot, wait until the oil is hot, then add the beef brisket and sauté for about 3 minutes over medium heat until both sides of the meat are browned.

    Next, add 200ml of water and cover the pot, simmering on low heat for about 30 minutes.

    After 30 minutes, add 500ml of beer, wait for the water to boil, then reduce the heat and simmer for an additional 40 minutes before turning off the stove.

    Finally, take the meat out onto a cutting board and slice it thinly to your liking. You can combine it with salt, pepper, and lime for a more flavorful brisket.
