Ingredients for Ice Cream Sandwich For 12 pieces

Butter cookies 28 pieces All purpose cream 250 ml (multi-purpose cream) Condensed milk 190 gr Unsweetened fresh milk 50 ml Cocoa powder 3 tablespoons Vanilla sugar 24 gr (or powdered sugar)

How to choose delicious butter cookies for ice cream

  • To make this sandwich ice cream even tastier, you should choose to buy flat, rectangular butter cookies instead of other shaped cookies.
  • Since the ice cream will have a certain sweetness, it’s best to choose cookies with moderate sweetness to create the most harmonious flavor.
  • Make sure to buy cookies from reputable brands, and pay close attention to the expiration date on the packaging to ensure safety for your health!

Where to buy all-purpose cream?

  • All-purpose cream contains 30% fat and is used for various purposes in cooking as well as baking.
  • This type of cream is commonly used for soups, salad dressings, making ice cream, and also as an ingredient for baking.
  • You can buy all-purpose cream at specialty baking ingredient stores, large supermarkets, or to save time, you can also order it from e-commerce websites!
  • The average price for this type of cream ranges from 130,000 – 160,000 VND per 1 liter (1 large box) (price updated in November 2021).

How to Make Sandwich Ice Cream

  • Whip the cream mixture

    First, add 250ml of all-purpose cream into a bowl and whip the cream at high speed until it forms stiff peaks. When you lift the whisk, the peak should stand upright but slightly bend downwards.

    Next, add 190gr of condensed milk and 24gr of vanilla sugar (or powdered sugar) into the bowl of whipped cream, and use a hand mixer to blend at the lowest speed until the mixture is fully combined.

    Divide the cream mixture into 2 equal parts into 2 bowls.

    Keep one bowl as is, and in the other bowl, gradually add 3 tablespoons of cocoa powder and use the mixer on low speed until the cocoa cream mixture is smooth and turns light brown.

    Finally, store both bowls of cream in the fridge until use to prevent the cream from melting!

  • Arrange the ice cream mold

    You pour about 50ml of unsweetened fresh milk into a bowl or a plate.

    Next, dip each biscuit into the milk and arrange 6 biscuits in the mold. Then, pour the whipped cream mixture on top, using a flat spatula to spread the cream evenly over the 6 biscuits.

    At this point, continue to arrange another 6 dipped biscuits on top and cover the cream completely.

    For the cocoa cream, you also repeat each step similar to the above!

  • Freeze and complete

    You cover the mold with a layer of aluminum foil, seal it tightly, and place the ice cream in the freezer for about 4 – 6 hours until it is completely frozen!

    After the ice cream has frozen, remove the aluminum foil, use a knife to cut the ice cream into pieces that fit the size of the biscuits. Finally, arrange the ice cream on a plate and it’s ready to enjoy!

  • Final Product

    When you eat the sandwich ice cream, you will feel the soft melting of the cookie pieces combined with the “plump” cool, chewy cream filling with a perfectly balanced sweet richness.
