- Typically, fresh and delicious tofu will have an off-white color; conversely, if you see tofu that is too yellow, it contains a lot of gypsum.
- When picked up, it feels light in hand, and when touched, it feels soft and smooth but has good elasticity, not easily broken or too soft and mushy.
- You should limit buying tofu when you cannot smell the characteristic fragrance of tofu but only a strange pungent smell emanating, as that indicates the tofu has spoiled and is no longer edible.

How to choose good sausages and ham
- Good sausages and ham are those that have bright colors, not blackened or showing any unusual spots on the surface.
- When you press down with your hand, the surface of the sausage or ham should feel soft, not too hard, and should not be slimy.
- Moreover, you should avoid buying sausages or ham that show signs of moisture or mold. Additionally, if you smell a strange fishy odor, that indicates the product has spoiled and should not be eaten.
How to prepare Spicy Mixed Noodles

Prepare the ingredients
First, the ham you bought should be sliced thinly using a knife. The sausages and rice cakes should be cut into thin diagonal slices.
For the tofu, gently slice it into bite-sized pieces. The green onions should have the roots removed, washed clean, drained, and then sliced diagonally. Peel the garlic and mince it finely.
Remove the roots of the enoki mushrooms, separate them into small clusters, and rinse them directly under clean running water, then drain.
Finally, place the Korean glass noodles in a bowl and soak them in 150ml of warm water for 20 minutes. When the noodles are soft, drain the water and let them dry.
Tip: If the rice cakes are still frozen, you can soak them in warm water for about 20 minutes before cutting. -
Making the sauce
You take a bowl and add 6 tablespoons of chili powder, 3 tablespoons of soy sauce, 2 tablespoons of fish sauce, 2 tablespoons of rice wine, 1 tablespoon of sugar, 1 teaspoon of salt, 1/2 teaspoon of ground pepper, 4 tablespoons of water, 1 teaspoon of soy bean paste, and 8 minced garlic cloves.
Use chopsticks to stir well so that the sauce mixture blends together.
Tip: Depending on your preference, you can replace the rice wine with soju, or the soy bean paste with miso if you’d like! -
Arrange the ingredients in the pot
Once the ingredients are prepared, take a pot and layer in the ham, sausage, rice cakes, tofu, green onions, 1 bowl of kimchi, ground pork formed into balls, 2 tablespoons of fermented soybeans, all the soaked Korean glass noodles, enoki mushrooms, 5 bowls of chicken broth, and 2 slices of cheese.

Cook the noodles
Next, place that pot on the stove and cook over medium heat for about 10 – 13 minutes.
When the broth is boiling and all the ingredients are tender, add 2 packets of ramen, gently press down with a ladle to submerge the noodles in the water, cook for another 2 – 3 minutes, then season to taste, turn off the heat, and serve in a bowl to enjoy!
