  • It’s best to buy a whole piece of pork and grind it yourself using a meat grinder to ensure safety and quality when using.

How to prepare Fried Pork Intestines with Lemongrass and Chili

  • Prepare the Pork Intestines

    After purchasing the pork intestines, clean them by removing all the fat and pushing out all the dirt inside, then rinse thoroughly.

    Next, turn the inner lining of the intestines inside out, use a spoon to scrape off the mucus inside, and then turn the intestines back inside out again.

    Then place the intestines in a bowl, add a little white alcohol and salt, and massage evenly for about 5 minutes to eliminate any odor.

    After massaging, rinse the intestines again by pouring water into the inner tube, using your hands to wipe the tube to clean both the inside and outside of the intestines.

    Repeat this process 2-3 times to clean the intestines and effectively remove the smell.

    • Method 1: Massage the pork intestines with salt and lemon (or vinegar). Then heat a pan, add about 4 tablespoons of fish sauce, bring to a boil, and boil the intestines for 3 minutes, then rinse with water.
    • Method 2: After cleaning the intestines, cut them into small pieces about 2 finger lengths, turn the intestines inside out, remove any fatty membranes and dirt inside, then use flour with a bit of salt to scrub for about 5-10 minutes and rinse with water.

    Pick young leaves and tips from basil and Vietnamese coriander, then wash them thoroughly. Cut into small pieces for eating.

  • Marinate minced meat

    Marinate minced pork with 2 teaspoons of seasoning powder, 1 tablespoon of sugar, 1 tablespoon of fish sauce, green pepper, chopped basil, chopped Vietnamese coriander, 30g of minced lemongrass, and 1 teaspoon of minced chili.

    Mix well and let it sit for about 20 minutes for the meat to absorb the spices.

  • Stuffing meat into the pig’s intestine

    Tie one end of the pig’s intestine tightly, then attach a funnel to the other end. After that, you stuff the meat through the funnel into the inside of the intestine; you can use chopsticks to push it down, making it easier to get the meat filling inside.

    Tip:
    • If you don’t have a funnel, you can use the top of a used water bottle as a stuffing tool.
    • Remember to stuff the meat tightly into the pig’s intestine so that the sausage looks plump and nice.

    After finishing the stuffing, you can divide the sausage into smaller pieces according to your preference, then tie the end tightly used for stuffing again.

    Next, use a toothpick or sharp stick to poke small holes along the sausage so that air can escape; this way, when steaming and frying, the sausage won’t burst due to being overly stuffed.

  • Steamed and Crispy Fried Pork Sausage

    Put the sausage in the steamer and steam for 15 minutes, then take it out and let it cool.

    Heat a pan on the stove, add 50ml of cooking oil and heat it. Place the steamed sausage in the pan, frying and turning it evenly on all sides until the sausage turns a nice golden color and releases a fragrant smell, then take it out and let it drain the oil.
