How to prepare Stir-fried Pickled Onions with Mixed Pork

Prepare and marinate the pork
After buying 200g of pork, soak the meat in diluted salt water for about 3 – 5 minutes to disinfect, then rinse with water, let it drain, and cut into bite-sized pieces.
Gradually add 1 spoon of sugar, 1 spoon of seasoning powder, and 1 spoon of soy sauce into a bowl containing the pork. Then add minced shallots, mix well, and marinate for 5 – 10 minutes.

Prepare other ingredients
First, wash 100g of straw mushrooms and cut them in half. Next, wash 100g of broccoli with water, then drain and cut into small, bite-sized pieces.
Then, trim off the old roots of 100g of chives, keeping the tender parts, and use a knife to cut them into small pieces.
Next, soak 200g of pickled onions in diluted salt water for about half an hour to clean and whiten the roots; any old roots can be trimmed off. Then use a knife to cut the pickled onions into 2 – 3 smaller pieces.
Wash a carrot, peel it, and cut it into long, thin slices.
Finally, after preparing 5 stalks of celery, remove some of the old leaves and wilted leaves. Then, wash the vegetables thoroughly, place them in a basket to drain, and cut them into short pieces about the length of a pinky finger.

Stir-frying pickled scallions and ingredients
Place a pan on the stove over medium heat, then add 2 tablespoons of cooking oil and a bit of garlic, sautéing until fragrant. When the garlic turns golden and fragrant, add the pork to the pan and stir-fry evenly.
Season with an additional 1 teaspoon of sugar, 2 teaspoons of seasoning salt, and 1/2 teaspoon of salt. Continue to stir-fry the meat for about 5 – 7 minutes until it is about 70% cooked.
When the meat is slightly tender, add the carrots and straw mushrooms to the pan, stirring for 2 – 3 minutes.
Next, add the broccoli stems and use chopsticks to stir briefly. After that, add the scallion flowers and pickled scallions to the pan, continuing to stir for about 5 minutes.
Finally, add the celery, stir-frying for 1 – 2 minutes, then taste and adjust the seasoning to your preference before turning off the heat.
Tip: To prevent the dish from becoming dry, you can add a little water while stir-frying!
