  • Make the cake base

    You put the cookies into a zip bag (food storage bag). Use a rolling pin or pestle to crush the cookies into crumbs, then transfer the cookie crumbs into the bowl.

    Next, add 30g of unsalted butter to the bowl with the cookie crumbs, mix well, then pour the mixture into the cake mold lined with parchment paper at the bottom, using a spoon or the bottom of a cup to flatten and compact it. Place the mold in the refrigerator until it’s time to decorate the cake.

  • Make strawberry jelly filling

    You soak 10gr of gelatin in cold water for about 5 minutes. Then you place a pot on the stove over medium heat, add 150 ml of filtered water and bring to a boil, then add 10gr of sugar, 100gr of strawberry jam, and 10gr of gelatin that has been soaked in cold water.

    You boil on low heat for 5 minutes, then squeeze in the juice of 1/2 lemon, stir gently, then turn off the heat, pour the mixture into a round mold, and refrigerate for 30 minutes.

  • Make cream cheese

    200gr of cream cheese should be left at room temperature for about 1 hour before preparing. Place the cream cheese in a large bowl, use a mixer to beat it until soft, then add 70gr of powdered sugar and beat for 1 minute on the lowest speed until the mixture is smooth.

    In another bowl, add 150gr of whipping cream, use a mixer to beat on low speed for about 30 seconds, then add the cream cheese mixture and stir well with a whisk.

    Next, add 5gr of finely chopped cherry blossoms, 5ml of vanilla extract, and 8gr of gelatin dissolved in hot water, then use a whisk to mix the mixture well.

  • Decorate the cake

    Wash the strawberries, remove the stems, and slice them thinly. Take the cake base out of the refrigerator, arrange the sliced strawberries around the surface of the mold, then pour 1/3 of the cream cheese mixture into the mold.

    Next, place the strawberry jelly filling in the center and pour the remaining cream cheese mixture into the mold, using a flat spatula to smooth the surface evenly and refrigerate for 2 hours.

  • Make cherry blossom jelly

    Add 5g of cherry blossom petals, 100ml of hot water, 10g of powdered sugar, and 4g of gelatin mixed with hot water into a glass, stir well with a spoon, and pour it over the cheesecake.

    Decorate with an additional 4 cherry blossoms (about 20g) on top of the cake, refrigerate for 4 hours, and then it’s ready to enjoy!
