The authentic Tây Sơn rice rolls will include the following ingredients: Fried spring rolls, boiled duck eggs, grilled pork skewers, fried tofu. Some places will also add: grilled pork skewers, Vietnamese pork sausage to enhance the flavor of the dish.
How to choose good pork
- To have delicious grilled meat, first you need to choose fresh meat by observing the color of the meat piece, which should be bright pink, not too red or too pale. Spoiled pork will have a pale, greenish color and a foul smell.
- Good pork has a firm and elastic texture. When selecting meat, press your finger into it; if the meat bounces back immediately, is not slimy, and does not leak water or juices, then it is good meat.
- You should choose shoulder or belly pork for better grilling.
- The meat should have 20% – 30% fat, as too lean meat will be dry, while too fatty meat will be overly greasy and hard to eat.
- Choose meat from young pigs, with thin skin, as the skin will be very tough when grilled.

Marinate and grill the meat
The belly pork you bought should be washed clean with diluted salt water and then rinsed with clean water, and allowed to drain.
How to clean pork and eliminate odors
- Blanch briefly with crushed shallots (or ginger).
- Or blanch briefly with boiling water mixed with a bit of white wine.
After that, you cut it into bite-sized pieces and marinate it with 1 tablespoon of fish sauce, 1 teaspoon of monosodium glutamate, 1 tablespoon of sugar, 1 teaspoon of seasoning powder, 1 tablespoon of soy sauce, and let it sit for about 30 minutes for the meat to absorb the flavors.
Once the meat is marinated, you skewer it into sticks and grill it until cooked. If you don’t have a charcoal grill, you can also grill the meat using a microwave or an electric grill!
Flip the meat evenly until it is cooked and has a golden-brown color on both sides.
Note:
- If grilling on a rack and you want the meat to not stick to it, you should brush a layer of oil on both sides of the rack before grilling.
- If grilling with charcoal, wait for the charcoal to burn completely red before placing the meat on to grill, as the smoke from charcoal is not good for your health.

Fry the tofu
Fry the tofu until golden. After frying, cut the tofu into bite-sized pieces.
Tips for frying crispy, delicious tofu:
- To prevent the tofu from sticking to the pan, add it when the oil is just hot, not when the oil is too hot or not hot enough.
- Fry in moderate quantities, not too much to avoid lowering the oil temperature, which would prevent the tofu from being crispy and may cause it to stick together.
- If the tofu sticks to the pan, turn off the heat, tilt the oil to one side, and wait for the pan to cool down, and the tofu will naturally come off.

Boiling Eggs
Boil the duck eggs until cooked, then place them in a bowl of cold water to make peeling easier. Use a knife to cut the eggs in half.

Preparing Fresh Vegetables
Wash cucumber, bean sprouts, and herbs with diluted salt water and let them drain.
Cut the cucumber into long strips suitable for rolling.

Making Dipping Sauce
To make the dipping sauce, which is the soul that creates the unique flavor for Tây Sơn rolls, roast the peanuts in a pan until golden.
Next, put the peanuts in a blender to grind them finely and then stir-fry them until cooked to ensure the sauce lasts longer and doesn’t spoil.
After that, mix 1.5 tablespoons of fish sauce, 1 tablespoon of lime juice, minced garlic, sliced chili, 1 tablespoon of sugar, and stir well to adjust to your taste (based on preference).
Finally, add the cooked peanuts to the fish sauce and stir well with a spoon to complete.

Rolling the spring rolls
You soak the rice paper in water to soften it before rolling.
You place the rice paper on a flat surface like a plate or tray, then in one corner of the rice paper, add the prepared ingredients such as: cucumber, bean sprouts, grilled meat, fried spring rolls, tofu, and duck egg, then carefully roll them up tightly.
