  • To make this dish fragrant and flavorful, you should choose sticky corn instead of large, crunchy American corn.
  • Fresh and delicious sticky corn has husks that are still bright green, not turning brown or yellow. Good corn will have smooth corn silk; the drier the silk, the older the corn, and when cooked, it will be more deliciously chewy.
  • Choose corn that has plump kernels, evenly colored yellow with a slightly opaque white, and feels heavy when held.

How to prepare Black Bean Corn

  • Rinse and cook black beans

    After purchasing, soak the black beans for about 2 – 3 hours to expand, then rinse them clean with water.

    Add the black beans to the rice cooker along with 1 cup (rice bowl) of coconut milk (the type with some coconut pulp), 500ml of water, 1/2 teaspoon of salt, close the lid, then press the “Cook” button and cook normally like cooking rice.

    After about 10 minutes, open the lid to check if the beans are soft; if they are not soft, continue cooking for another 5 minutes until the black beans are just soft.

  • Prepare and separate corn kernels

    Remove the husk from the sticky corn, clean the silk, and separate the kernels, then wash thoroughly and place in a colander to drain.

  • Cook corn with black beans

    When the black beans are boiling and soft, add all the corn kernels to cook together.

    Cook for about another 10 – 15 minutes, then you can open the rice cooker lid to stir the corn and beans together, then cover the lid again and continue cooking for another 10 minutes until the corn and beans are tender and the water in the pot is completely evaporated.

  • Mix sugar and melt the sugar

    Add 3 tablespoons of sugar or more depending on your taste into the pot, mix well with the corn and black beans and cook for another 10 minutes, then turn off the heat, transfer to a bowl, and it’s ready to enjoy.
