- Limit buying carrots with wilted stems that are no longer tightly attached to the body, especially if the body is slimy because those carrots are spoiled and should not be eaten.

- Fresh shiitake mushrooms are those with a bright brown cap, and especially without any signs of mold.
- Touch them with your hand to feel that the mushrooms are not easily crushed, and the cap should fit tightly against the stem, not too spread out.
- Limit buying shiitake mushrooms if you can smell unusual mold because that indicates they have been stored for too long and are no longer edible.

- Fresh onions have thin, shiny skins, uniformly colored, and especially have a round shape, not too deformed.
- When you touch them, they should feel dry, have a moderate firmness, and you should observe that the roots are still plentiful.

Prepare the chicken
First, take the chicken you bought and rub a little salt over the surface of the meat for 3 – 5 minutes, while removing any remaining blood, then rinse several times with water until clean and drain.
Next, use a knife to cut the chicken into small bite-sized pieces.

Prepare other ingredients
For the carrots you bought, use a peeler to peel the skin, wash directly under clean running water, drain, and cut into bite-sized pieces. Peel the onion and then cut it into wedges.
Next, take a bowl and add all the dried shiitake mushrooms, soak for about 30 – 40 minutes until the mushrooms are soft, rinse a few times with water, and use your hands to squeeze the mushrooms to clean them, drain, and cut off the stems with a knife.
Remove the roots from the cilantro, wash it 1 – 2 times with clean water, drain, and chop finely with a knife.
Peel the onion and then cut it into wedges.
Finally, peel the shallots and chop them finely.

Marinate the chicken
You take a bowl and add all the dried chicken meat into it, then proceed to marinate with 2 teaspoons of ground pepper, 1 tablespoon of fried garlic, 100gr of oyster sauce, 1 teaspoon of monosodium glutamate, 1 tablespoon of seasoning powder, and 2 tablespoons of sugar.
Use chopsticks to mix everything well together and allow the chicken to absorb the spices for about 15 – 30 minutes.

Cooking chicken with ingredients
You place a pot on the stove with 3 tablespoons of cooking oil and heat it over medium flame. When the oil is gently bubbling, add the minced shallots and sauté until fragrant.
Next, add the marinated chicken, increase the heat to high, and stir-fry with chopsticks for about 3 minutes, then add the softened shiitake mushrooms and continue to stir-fry for another 3 minutes.
Once the chicken has browned, add half of the fresh coconut water and cook for about 7 – 10 minutes. When it boils, skim off the foam, reduce to medium heat, and cook for another 20 minutes.
After that, add all the carrots and the remaining fresh coconut water, cooking for about 25 – 30 minutes, continuing to season with 1/2 teaspoon of seasoning, and use a ladle to stir evenly.
Finally, adjust the seasonings to taste and add 1 sliced onion, cooking for another 3 – 5 minutes until all ingredients are tender, then turn off the heat, serve in a bowl with a bit of coriander, and you’re done.
