Prepare the ingredients
First, remove the outer husk of the corn and leave the inner husk intact. Using a knife, separate the cob and kernels. Don’t rush to discard the cob; keep it for cooking to make the broth sweeter and more fragrant.
As for the fresh lotus seeds, wash them thoroughly and place them in a basket to drain. If using dried lotus seeds, soak them overnight to soften. This recipe uses fresh lotus seeds that have been stored in the freezer, so soaking is not necessary.

Add the ingredients to the milk maker
Add the corn cob, the inner corn husk, the corn kernels, the lotus seeds, and water into the milk maker in that order.
Next, select the “simmer” function. Although the machine runs for 30 minutes in this mode, it’s best to turn it off around 15 minutes in because at this point, the corn and lotus seeds will be cooked and fragrant.

Blend for the second time
You remove the corn husk and corn cob from the machine. Next, add coconut milk and rock sugar into the machine.
Finally, you select the “non-cooking milk” function. This function will blend for 8 minutes at high power, ensuring the milk is smooth and the flavors blend well together.
